Provided by Food Network Kitchen

Time 15m

Yield 4 servings

Number Of Ingredients 10

1/3 cup all-purpose flour, for dredging
2 large eggs
Kosher salt and freshly ground black pepper
1 1/2 cups fresh breadcrumbs
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
4 bone-in pork chops, about 1/2-inch thick and patted dry (about 11/2 pounds total)
Extra-virgin olive oil, for shallow frying
Cooked spinach, for serving
Lemon wedges, for serving

When the oil shimmers, add the chops and fry until golden brown and crispy, 3 to 4 minutes on each side. Drain on paper towels briefly. Serve hot with cooked spinach and lemon wedges.

CRISPY SOUTHERN FRIED PORK CHOPS

Another favorite of my family that dates back to my grandmother, these chops come out so crispy and delicious. I serve them with mashed potatoes, a veggie, and sawmill gravy. A great comfort meal any time! This recipe is very similar to my Crispy Southern Fried Chicken recipe. I found that it works very well with pork chops,...

1 1/2 tsp chicken flavored base

SOUTHERN PORK TENDERLOIN

I love this recipe because it's very easy and very much an under-20-minute recipe when you are in a hurry! I serve it with garlic mashed potatoes and a side of either mixed veggies or some sweet corn on the cob! I top it with my Mustard Pork Garnish recipe I have on site.

BATTER FOR FRIED PORK

Batter for Fried Pork image

I made this one Halloween night many years ago attempting to make Sweet and Sour Pork. My mom kept eating the fried pork before I could make the sauce. "Do you have to put that sauce on?" She asked me. Well she ate it with the sauce but for future we just would do the battering part. A friend of mine uses chicken drummies-they fly out the door.

SWEET AND SOUR PORK

Sweet and Sour Pork image

Sweet and sour are two of the five flavors of classical Chinese cooking (along with salty, pungent, and bitter). I like this version of the crispy pork recipe with fresh pineapple.

Provided by Diana Kuan

Categories     Fruit Juice     Pork     Stir-Fry     Dinner     Pineapple     Soy Sauce     Dairy Free     Tree Nut Free

Yield Serves 4 as part of a multicourse meal

Number Of Ingredients 19

Batter
2 large eggs, beaten
1/4 cup cornstarch
1/4 cup all-purpose flour
1 pound boneless pork loin, cut into1-inch pieces
Sauce
3 tablespoons water
2 tablespoons ketchup
2 tablespoons fresh pineapple juice, or juice from the canned pineapple, or substitute orange juice
1 1/2 tablespoons cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
2 tablespoons sugar
2 cups peanut or vegetable oil for frying, plus 1 tablespoon for stir-frying
1 tablespoon minced garlic
1 teaspoon minced fresh ginger
1 cup fresh or canned bite-size pineapple chunks
Special equipment
Instant-read oil thermometer

Steps:

  • 1. Prepare the batter: In a medium bowl, stir together the eggs, cornstarch, and flour. The batter should be liquidy enough to coat the pork. If the batter looks too dry, add 1 to 2 tablespoons of water and stir again. Add the pork and stir gently to coat. Let stand at room temperature for 10 minutes.
  • 2. Prepare the sauce: In a small bowl, stir together the water, ketchup, pineapple juice, cider vinegar, Worcestershire sauce, soy sauce, and sugar until the sugar is dissolved. Set aside.
  • 3. Heat the peanut oil in a wok until it registers 350°F on an instant-read oil thermometer. Working in 2 or 3 batches, add the first batch of pork cubes and fry until golden brown on the outside and cooked through, 4 to 5 minutes. Remove the pork with a slotted spoon and drain on a plate lined with paper towels. Remove any excess bits of batter from the oil with a slotted spoon or fine-mesh strainer. Continue frying the rest of the pork.
  • 4. Transfer the oil to a heat-proof container. (It will take about 1 hour to fully cool, after which you can transfer it to a container with a tight lid to dispose of it.) Wipe up any food remains in the wok with paper towels, being careful not to touch the metal directly with your hands.
  • 5. Heat the remaining 1 tablespoon oil in the wok or a skillet over medium-high heat. Add the garlic and ginger and stir-fry until just aromatic, about 20 seconds. Add the pineapple and the sauce and stir to coat the vegetables. Let the sauce simmer for 2 to 3 minutes to allow the pineapple to become tender (about 1 minute for canned pineapple). Return pork to the wok and toss until well coated with the sauce. Transfer to a plate and serve.

Tips:

  • For a crispy coating, double-coat the pork in the batter.
  • Use a large pot or Dutch oven for frying the pork to avoid overcrowding.
  • Maintain the oil temperature between 350°F (175°C) and 375°F (190°C) for optimal frying results.
  • Gently place the pork pieces into the hot oil to prevent splattering.
  • Do not overcrowd the pan, as this will lower the oil temperature and result in soggy pork.
  • Fry the pork in batches if necessary to ensure even cooking.
  • Use a slotted spoon or tongs to carefully remove the pork from the oil, allowing excess oil to drip off.
  • Place the fried pork on a wire rack or paper towels to drain any remaining oil.
  • Serve the fried pork immediately with your favorite dipping sauce or condiments.

Conclusion:

In conclusion, creating a flavorful and crispy batter for fried pork is a culinary skill that can elevate this classic dish. Experiment with different seasonings and ingredients to find the perfect combination that suits your taste. Remember to use high-quality pork, prepare the batter correctly, and fry the pork at the right temperature for optimal results. With these tips and tricks, you can create a delicious and satisfying fried pork dish that will impress your family and friends.
