Yield 4 servings

Number Of Ingredients 11

1 cup all-purpose flour
1 cup cornmeal
1 tablespoon baking powder
1 tablespoon kosher salt
1/2 teaspoon cayenne pepper
1 (12-ounce) bottle amber beer
4 (6-ounce) catfish fillets

2 tablespoons granulated garlic
1 lemon, juiced

  • Preheat a deep-fryer to 350 degrees F.
  • In a large bowl, add the flour, cornmeal, baking powder, salt and cayenne and whisk to combine. Whisk in the beer, being sure to remove any lumps.
  • Cut the catfish fillets in half lengthwise to make 2 strips. If desired, cut into bite-sized pieces. In a small bowl add the salt, pepper and granulated garlic. Season the fillets with some of the salt mixture. Reserve the remaining salt mixture for another use.
  • Dip each strip in the beer batter and add to the fryer, a few at a time, moving them around so they don't stick. Fry until brown and crispy, about 3 to 4 minutes. Remove from the fryer to a serving platter. Repeat with the remaining fillets and season the fish with lemon juice.

CRUNCHY CATFISH NUGGETS

Crunchy Catfish Nuggets image

Crunchy catfish nuggets that can be served as hors d'oeuvres. These were a special hit with my 3 year old who loved the fact that she could eat them like finger food. You may want to adjust the seasoning - my daughter is used to spicy stuff! These have the great taste of fried fish without the grease.

BATTER DIPPED CATFISH NUGGETS

Batter Dipped Catfish Nuggets image

I have found that catfish nuggets are sold fairly cheap at my local grocery store. This recipe is a tasty way to make dinner on a tight budget.

Categories     Lunch/Snacks

Time 20m

Yield 4 serving(s)

Number Of Ingredients 11

1 1/2 lbs catfish nuggets
1 egg
1 cup buttermilk
1/2 cup white cornmeal
1/4 cup breadcrumbs
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne
canola oil

Steps:

  • Scramble the egg in a large bowl then whisk in the buttermilk follow by the rest of the ingredients, except fish.
  • Heat 2-3 inches of oil in a large frying pan until hot. Dip the nuggets into the batter so they are coated then gently drop into the hot oil. Fry for 5-7 minutes, until golden brown & crispy.
  • Repeat until all the fish is fried. Place the fried fish onto a paper towel lined plate to drain excess oil.

Tips:

  • Choose the right catfish: Use fresh or frozen catfish fillets that are firm and have a mild flavor. Avoid fillets that are thin or have a lot of bones.
  • Cut the catfish into bite-sized pieces: This will help the nuggets cook evenly and make them easier to eat.
  • Make sure the batter is well-seasoned: The batter is what gives the nuggets their flavor, so make sure it is well-seasoned with salt, pepper, and other spices.
  • Use a large skillet or Dutch oven to fry the nuggets: This will help prevent the oil from splattering and will allow you to cook the nuggets in batches.
  • Don't overcrowd the skillet: If you overcrowd the skillet, the nuggets will not cook evenly and will be more likely to stick together.
  • Cook the nuggets until they are golden brown: This will ensure that they are cooked through and have a crispy coating.
  • Serve the nuggets with your favorite dipping sauce: Some popular choices include tartar sauce, ranch dressing, or honey mustard.

Conclusion:

Batter-dipped catfish nuggets are a delicious and easy-to-make appetizer or main course. By following these tips, you can make sure your nuggets are crispy, flavorful, and cooked to perfection. So next time you're looking for a quick and tasty meal, give batter-dipped catfish nuggets a try!
