1 large russet potato (If it looks like Mr. Potato Head®, you've got the right one.)
Canola oil to coat
Kosher salt
Optional toppings, such as butter, sour cream, shredded Cheddar and/or scallions

Steps:

  • Heat oven to 350 degrees and position racks in top and bottom thirds. Wash potato (or potatoes) thoroughly with a stiff brush and cold running water. Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking. Place in a bowl and coat lightly with oil. Sprinkle with kosher salt and place potato directly on rack in middle of oven. Place a baking sheet on the lower rack to catch any drippings.
  • Bake 1 hour or until skin feels crisp but flesh beneath feels soft. Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another. It will pop right open. But watch out, there will be some steam. Add toppings if using.

1 medium baking potato
1 teaspoon olive oil
½ teaspoon salt
2 teaspoons butter
1 pinch freshly ground black pepper
¼ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Scrub the potato, and pierce the skin several times with a knife or fork. Rub the skin with olive oil, then with salt.
  • Place the potato in the preheated oven, and bake for 90 minutes, or until slightly soft and golden brown. Slice the potato down the center, and serve with butter and black pepper. Sprinkle shredded Cheddar cheese over the top, if desired.

Recipe from my local grocery store that looked so tasty on the recipe card but I didn't get to taste it, as it wasn't done yet. UPDATE since I first posted: I just made this recipe and have now cut the butter back to 1/2 of what was listed, so if you love a ton of butter use 4 tablespoons, but I used 6 potatoes (which they are not that large) with the 4 tablespoons and could have had it with alot less. I also cooked it longer than 15 minutes to get the bacon crisper (probably 20-25 minutes), but they were then cooked perfectly!!

4 white potatoes, medium (rinsed)
2 tablespoons unsalted butter
1 medium onion (rinsed)
1/2-1 teaspoon herb-seasoned salt, to taste
1/2 teaspoon pepper
4 slices bacon

Steps:

  • Preheat oven to 475°F Cut potatoes into quarters; place in microwave-safe bowl. Top with butter; cover and microwave on HIGH 5 minutes. Meanwhile, slice onion thinly.
  • Stir potatoes to evenly coat with butter; microwave 5 more minutes or until potatoes are hot and just beginning to soften.
  • Transfer potatoes to 2-quart baking dish and arrange in single layer. Sprinkle with seasoned salt and pepper. Arrange onion slices evenly over potatoes; top with bacon slices. Bake 15-25 minutes or until potatoes are tender and bacon is browned and semi-crisp. Serve. (Makes 6 servings.).

If you're like me, you'll know the best part of the baked potato is the skin, which is why I like to spice mine up a bit. This is a really easy way to add a bit more flavour, and because potatoes are so versatile you can try all kinds of different spice combinations.

4 tablespoons olive oil
1/2 teaspoon oregano
1/2 teaspoon schwartz spicy italian seasoning
fresh ground black pepper, to taste
4 medium baking potatoes

Steps:

  • Mix the olive oil and spices together.
  • Wash the potatoes and pierce the skin a few times with a fork.
  • Smear the oil mixture over the potatoes, best done with a pastry brush.

  • I do mine in a 200 C fan oven for 30-40 minutes.
