Tips:
- Choose the Right Pork Chops: Select bone-in pork chops at least 1 inch thick for best results.
- Marinate the Pork Chops: Marinating the pork chops in a mixture of olive oil, garlic, rosemary, and thyme for at least 30 minutes tenderizes the meat and infuses it with flavor.
- Sear the Pork Chops: Sear the pork chops in a hot skillet over medium-high heat for 2-3 minutes per side to create a flavorful crust and help seal in the juices.
- Slow-Cook the Pork Chops: After searing, transfer the pork chops to a slow cooker or braising dish with the remaining marinade, chicken broth, and vegetables. Cook on low for 6-8 hours or until the pork is fall-apart tender.
- Make the Basil-Tomato Sauce: While the pork chops are cooking, prepare the basil-tomato sauce by sautéing onions and garlic in olive oil, then adding crushed tomatoes, fresh basil, and seasonings. Simmer until the sauce has thickened.
- Serve with Sides: Serve the cooked pork chops with the basil-tomato sauce spooned over them. Accompany with roasted potatoes, grilled vegetables, or a fresh salad for a complete meal.
Conclusion:
This recipe for Basil-Tomato Pork Chops offers a delightful combination of flavors and textures that will satisfy any palate. The tender and juicy pork chops, slow-cooked in a flavorful broth, are complemented perfectly by the vibrant and aromatic basil-tomato sauce. The dish is easy to prepare, making it a great option for busy weeknights or special occasions.
