3 pounds sweet potatoes (4 to 5 medium)
3 slices bacon, chopped
1 tablespoon bourbon or apple cider
1/2 cup heavy cream, warmed
6 tablespoons cold salted butter, cut into pieces
3 tablespoons maple syrup, plus more for drizzling
Kosher salt

Steps:

  • Preheat the oven to 400 degrees F. Pierce the potatoes all over with a fork and place on a baking sheet. Bake until completely soft, about 45 minutes. Let cool slightly. Split the potatoes in half, scoop out the flesh into a medium bowl and set aside. Discard the skins.
  • Cook the bacon in a large saucepan over medium heat, stirring, until crisp, 8 to 9 minutes. Remove with a slotted spoon to a paper towel¿lined plate. Add the bourbon or cider to the drippings in the saucepan and cook until mostly evaporated, about 30 seconds. Add the potatoes, heavy cream, butter, maple syrup and 1 1/2 teaspoons salt; mash with a potato masher until smooth and warmed through.
  • Transfer the potatoes to a bowl; top with the bacon and drizzle with more maple syrup before serving.

3 lb dark-orange sweet potatoes (about 4 potatoes)
8 slices bacon
1 large onion, chopped (3/4 cup)
1/4 cup half-and-half, warmed
1 teaspoon chopped fresh thyme leaves
1/2 teaspoon salt
1/4 teaspoon pepper
Fresh thyme sprigs, if desired

Steps:

  • Heat oven to 350°F. Pierce sweet potatoes all over with fork; place on cookie sheet with sides. Bake about 1 hour 15 minutes or until tender when pierced with fork. Let stand 15 minutes or until cool enough to handle.
  • Meanwhile, in 10-inch skillet, cook bacon over medium-high heat 4 minutes, turning occasionally, until brown. Remove bacon from skillet; place on paper towels to drain. Reserve 1 tablespoon drippings in skillet; discard remaining drippings. Add onion to skillet; cook over medium heat 5 to 8 minutes, stirring occasionally, until softened.
  • Peel sweet potatoes; place in large bowl. Mash until no lumps remain. Add warm half-and-half, thyme, salt and pepper; mash until very smooth.
  • Add onion to sweet potatoes. Crumble bacon; reserve 2 tablespoons for garnish. Add remaining bacon to potatoes; stir until blended. Garnish with reserved bacon and thyme sprigs.

Inspired by leftover baby new potatoes and a big batch of homemade pesto, I came up with this yummy salad that's quite different from a traditional potato salad. I hope you like it!

1 lb tiny new potatoes, cooked (leave skins on)
1/2 cup diced red onion
3 slices bacon, cooked well and sliced
2 teaspoons snipped fresh chives
3 tablespoons low-fat sour cream
2 tablespoons mayonnaise
2 tablespoons basil pesto (preferably homemade)
salt, to taste
fresh ground black pepper, to taste
2 tablespoons freshly grated parmesan cheese (optional)

Steps:

  • For this recipe, use the tiniest new potatoes you can find; I used fresh baby potatoes from a farmers' market that were about the size of marbles. My potatoes were leftovers, so they were already boiled, but feel free to cook potatoes if needed; it will take longer to make this recipe though.
  • In a mixing bowl, place the potatoes, onions, bacon and chives; lightly toss together.
  • In a small bowl, stir together the sour cream, mayo and pesto; feel free to add more pesto if you wish.
  • Add pesto mixture to potatoes and combine; taste. It will need salt and pepper.
  • Chill for at least one hour before serving to let the flavours blend; taste before serving as it may need more salt. If desired, sprinkle parmesan over top of salad before serving; it's not necessary but it adds another flavour element to the salad that I felt went well.
  • This recipe would easily double, if not triple.

5 slices uncured bacon, diced

¼ cup roasted almonds
3 tablespoons olive oil, or more to taste
1 tablespoon lemon juice
salt and ground black pepper to taste
¾ cup milk

Steps:

  • Place sweet potatoes into a saucepan, cover with chicken broth, and bring to a boil. Reduce heat to low, cover, and simmer until sweet potatoes are tender enough to pierce easily with a fork, about 10 minutes. Drain and return potatoes to pan; add butter and cover pan.
  • Cook and stir bacon in a large skillet over medium heat until browned and crisp, about 10 minutes. Transfer bacon to paper towels to blot grease.

2 lbs yukon gold potatoes, peeled and quartered
2 cloves garlic
2 teaspoons kosher salt
8 fresh basil leaves, chopped
2 tablespoons olive oil
1/4 cup cream, room temperature

  • Place potatoes and garlic in small stock pot,cover with water.
  • Add 1 tsp of the salt and bring to boil over high heat.
  • Cook until tender,about 25 minutes.
  • Drain in colander.
  • Place basil in bowl of food processor,process until finely chopped,with motor still running.

  • Set aside.
