Steps:
- Scrub potatoes, but do not peel them. Cook in water to cover, with garlic, until tender, about 10 minutes. Mash potatoes, still unpeeled, in a food mill or with a mashing tool; pick out and discard large pieces of skin. Stir in the basil and buttermilk; season with salt and pepper, and serve. (Potatoes can be made in advance and refrigerated. Before serving, put potatoes in glass dish, cover with plastic wrap and reheat in microwave oven for 4 to 6 minutes on high setting. Stir once or twice while reheating. If potatoes become too dry, stir in a little buttermilk.)

Steps:
- Place sweet potatoes into a saucepan, cover with chicken broth, and bring to a boil. Reduce heat to low, cover, and simmer until sweet potatoes are tender enough to pierce easily with a fork, about 10 minutes. Drain and return potatoes to pan; add butter and cover pan.
- Cook and stir bacon in a large skillet over medium heat until browned and crisp, about 10 minutes. Transfer bacon to paper towels to blot grease.
- Process basil and almonds in a food processor until pulverized, about 30 seconds, and slowly drizzle olive oil into the running food processor until thick, 1 to 2 minutes. Add lemon juice, salt, and black pepper to basil mixture and pulse several times to combine to make the pesto.
- Beat sweet potatoes in a bowl with an electric mixer on medium speed, slowly adding milk, until potatoes are fluffy and smooth. Alternatively, mash sweet potatoes with a fork if you prefer a more chunky texture. Season to taste with more salt; stir in pesto and bacon. Serve immediately.

BASIL MASHED POTATOES
Steps:
- * Peel potatoes and cut into two-inch chunks. Place into a large saucepan, cover with water, bring to a boil. Cook for 20-25m, until very tender. Drain, return to saucepan, cook over low heat until water evaporates. * Blanch basil leaves, boiling 15 seconds, then immersing in ice water. * Heat half-and-half and cheese in a small saucepan over medium heat until the cream simmers. * Place basil in a food processor and purée. * Add hot cream mixture to basil and process until smooth. * Beat potatoes until they are broken up, then slowly beat in hot basil mixture, salt, and pepper.
Tips:
- For the best mashed potatoes, start with high-quality potatoes. Yukon Gold and Russet potatoes are both good choices, as they are starchy and have a smooth texture.
- Peel and cut the potatoes into even-sized pieces. This will help them cook evenly.
- Boil the potatoes in salted water until they are tender. Drain the potatoes and return them to the pot.
- Mash the potatoes until they are smooth. You can use a potato masher, a hand mixer, or a stand mixer.
- Add butter, milk, and salt and pepper to taste. You can also add other ingredients, such as garlic, herbs, or cheese.
- Serve the mashed potatoes hot. They can be garnished with fresh herbs or grated Parmesan cheese.
