4 grouper fillets (or other firm white fish)
1 teaspoon sea salt
1 teaspoon freshly cracked black pepper
1/4 cup Land O Lakes® Butter with Olive Oil & Sea Salt
2 cloves garlic, grated
1/2 teaspoon freshly cracked black pepper
1/2 cup dry white wine
3 tablespoons freshly squeezed lemon juice
1/4 cup heavy cream
3 tablespoons chopped fresh basil

Steps:

  • Set oven control to broil. Spray cookie sheet with cooking spray. Place fish fillets on cookie sheet. Sprinkle both sides of fillets evenly with salt and 1 teaspoon of the pepper.
  • Broil about 10 to 15 minutes until fish flakes easily with fork.
  • Meanwhile, in large skillet, melt butter over low heat. Add garlic and remaining 1/2 teaspoon pepper. Cook and stir until garlic is fragrant. Add wine; heat to boiling over medium-low heat. Boil until sauce is reduced by half. Stir in whipping cream and basil. Simmer until thickened.
  • To serve, place broiled grouper on individual plates. Top with cream sauce.

3 teaspoons butter, divided
8 plum tomatoes, seeded and chopped

1 cup uncooked whole wheat orzo pasta
1 cup evaporated milk
1/2 cup loosely packed basil leaves, julienned
3/4 teaspoon salt

Steps:

  • In a large nonstick skillet coated with cooking spray, cook chicken in 2 teaspoons butter until no longer pink. Remove and keep warm. 1 lb salmon fillet
1/4 cup butter, melted
1/4 cup lemon juice
1/4 teaspoon garlic powder
sea salt
fresh ground black pepper
1 lb penne pasta
1/2 cup butter
1 (8 ounce) package cream cheese
1/2 cup parmesan cheese
1 cup half-and-half
1/4 teaspoon garlic salt
2 -3 tablespoons pesto sauce
1 (10 1/2 ounce) can artichoke hearts, quartered
1/2 lb asparagus

Steps:

  • Preheat oven to 350 degrees. Cut the salmon into 1 inch cubes and place in a buttered baking dish. Add the lemon juice to the melted butter and drizzle over the salmon. Season the salmon with garlic powder, salt, and pepper. Bake for 15 minutes or until the salmon flakes easily with a fork. Do not let the salmon overcook. Remove immediately from the oven and keep warm.
  • While the salmon is cooking, add the pasta to a large pot of salted boiling water. Cook until al dente, about 8 to 10 minutes. Cut the asparagus into 1 inch pieces. Add the asparagus to the boiling water during the last three to five minutes of cooking. Drain and put in a large serving bowl.
  • While the salmon and pasta are cooking, combine the butter, cream cheese, parmesan cheese, and half-and-half in a saucepan. Season with garlic salt. Bring to a simmer over medium heat. Cook, stirring constantly, until slightly thickened. Remove from the heat. Add the pesto at this point. Go light with the pesto to ensure the sauce is lightly flavored.
  • Mix the artichoke hearts with the asparagus and penne pasta and pour the sauce over the pasta mixture. Mix lightly to coat everything. Add the salmon cubes to the top of the pasta. If desired, serve with extra parmesan cheese and freshly cracked black pepper.

2 cups chopped onions
1 large eggplant, cut into 1/2-inch cubes (about 7 cups cubed)
1 1/2 teaspoons salt
3/4 teaspoon crushed red pepper flakes
2 tablespoons minced garlic
1/2 cup ricotta cheese or 1/2 cup mascarpone cheese
12 ounces fresh spinach, blanched, squeezed dry, and chopped (about 2/3 cup chopped)
1 cup freshly grated parmesan cheese
1/4 teaspoon sugar
0.5 (12 ounce) package jumbo pasta shells (about 18 shells)
2 cups italian crushed tomatoes
3 cups heavy cream
1/4 cup finely chopped fresh basil leaf
4 ounces coarsely grated Fontina cheese

Steps:

  • In a large skillet, heat 1 tablespoon of the olive oil over medium-high heat and saute the sausage until golden brown, stirring to break up the pieces, about 6 minutes. Add half of the onions and the eggplant, season with 3/4 teaspoon salt and 1/4 teaspoon crushed red pepper, and cook for 4 to 6 minutes, or until the vegetables are lightly caramelized and very soft. Add 1 tablespoon garlic and cook for 1 minute. Remove from the heat and transfer to a large bowl to cool.

1/4 cup dry breadcrumbs
1/4 teaspoon garlic powder
4 boneless skinless chicken breasts
3 tablespoons butter
1 tablespoon olive oil
1/2 cup chicken broth

1 (4 ounce) jar diced pimentos, drained
1/2 cup freshly grated parmesan cheese
1/4 cup minced fresh basil
1/8 teaspoon pepper
1 dash salt

  • Preheat oven to 350 degrees.
  • Place milk in a shallow bowl.
  • Place the bread crumbs and garlic powder in another shallow bowl.

2 ears Fresh sweet corn, shucked and removed from the cob
3 tablespoons Red bell pepper, minced
3 tablespoons sweet onion, diced
10 each Fresh basil leaves, chiffonade
Freshly cracked pepper
5 tablespoons unsalted butter
1 1/2 cups heavy cream
1 pinch nutmeg, ground
6 ounces ricotta cheese, room temp
6 ounces cream cheese, room temp
1 package wonton wrappers
2 egg yolks, beaten
3 tablespoons Parmesan, grated

Steps:

  • Special equipment: cookie cutter (3-inch)
  • Melt butter in saute pan, add in corn, red bell pepper and onion. Let saute until onion is translucent and corn has released some of it's sugars. Add in 1/2 of the basil leaves and a couple of twists of black pepper. Add in 1/4 cup heavy cream and reduce by half. Set aside to cool.
  • When cool, smash up a bit with a fork, stir in ricotta and cream cheese. Place wonton wrappers down (three at a time works) and in the center of each, place 1 1/2 t filling. Brush exposed wrapper with egg yolk, carefully place a second wrapper on top and carefully seal edges, making sure to get out any air bubbles. Cut with star cutter, work fingers around edges to make sure seal is tight. Set aside on floured baking sheet and continue to assemble.
  • When finished, boil water and gently add raviolis a few at a time, cooking for 2 minutes or until they float. Carefully remove and drain.
  • For Sauce: In clean saute pan, melt remaining 4 tablespoons butter, when melted, add in remaining basil, saute until crisp and butter is just very lightly browning. Add in remaining cream and reduce to thickened. Salt and pepper to taste, serve over raviolis immediately.
  • Garnish with Parmesan.

20 fresh Basil leaves
1/3 Cup dry white wine
2 cloves Garlic
1 Cup heavy cream
1 TBS fresh Lemon juice
2 TBS unsalted Butter
Sea Salt and fresh ground Black Pepper to taste

Steps:

  • 1)Preheat grill to high. 2)Rinse salmon under cold water, drain and blot dry. Brush salmon on both sides with the oil. season with lemon juice, salt and pepper. 3)Combine Basil, wine and garlic in a blender and process until a smooth puree forms. transfer to a small heavy saucepan and stir in cream. Bring to a simmer over medium heat, be careful because the cream can boil over very rapidly. Reduce by half, about 15 minutes, stirring frequently. 4 red snapper fillets
1 teaspoon kosher salt, plus more to taste
Freshly ground pepper to taste
1 1/2 cups white wine
24 littleneck clams, scrubbed
1 teaspoon unsalted butter
2 shallots, peeled and thinly sliced
1/2 cup heavy cream
2 plum tomatoes, seeded and diced
1/4 cup thinly sliced basil leaves

Steps:

  • Season the snapper with 1 teaspoon of salt and pepper and place in a steamer. Pour the wine in a large pot and boil. Lower heat, place the steamer in the pot and cover tightly. Steam for 5 minutes. Place the clams around the snapper. Cover and steam until the clams open, about 5 minutes.
  • Remove the steamer from the pot and keep the snapper and clams warm. Simmer the wine until reduced to 1/2 cup, about 5 minutes. Remove from the pot and set aside. Place the butter in the pot and turn the heat to low. Add the shallots and stir until softened, about 1 minute. Add the reduced wine and the cream and simmer slowly for 2 minutes. Stir in the tomatoes and remove from heat. Taste and add salt if needed.
  • Place each snapper fillet on a plate and surround with clams. Spoon some sauce over and around the snapper. Scatter the basil. Serve.

4 (8-ounce) pork chops, bone-in, 3/4-inch to 1-inch thick
Kosher salt and freshly ground black pepper, to taste
1 cup Panko*
1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley leaves
1/2 cup all-purpose flour
2 large eggs, beaten
2 tablespoons unsalted butter
For the lemon basil cream sauce
2 tablespoons unsalted butter
2 cloves garlic, minced
1/4 teaspoon red pepper flakes, or more, to taste
1/2 cup chicken broth
1 cup heavy cream
1/4 cup freshly grated Parmesan
1/4 cup basil leaves, chiffonade
Zest of 1 lemon
Kosher salt and freshly ground black pepper, to taste

Steps:

  • 1.Preheat oven to 400 degrees F. 2.Season pork chops with salt and pepper, to taste. 3.In a large bowl, combine Panko, Parmesan and parsley; set aside. 4.Working one at a time, dredge pork chops in flour, dip into eggs, then dredge in Panko mixture, pressing to coat. 5.Melt butter in a large oven-proof skillet over medium high heat. Add pork chops and sear both sides until golden brown, about 2-3 minutes. 6.Place into oven and roast until completely cooked through, reaching an internal temperature of 140 degrees F, about 8-10 minutes; set aside and keep warm.* 7.To make the lemon basil cream sauce, melt butter in the skillet. Add garlic and red pepper flakes, and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in chicken broth, heavy cream, Parmesan, basil and lemon zest; season with salt and pepper, to taste. Bring to a boil; reduce heat and simmer until slightly thickened, about 5 minutes. 8.Serve pork chops immediately with cream sauce. *Panko is a Japanese-style breadcrumb and can be found in the Asian section of your local grocery store. *Cooking time will vary depending on the size and thickness of the pork chops.

1 tablespoon olive oil
1 tablespoon butter
1/4 cup shallot, thinly sliced (one large shallot)
1 tablespoon garlic, minced (2-3 cloves)
1/3 lb shrimp, peeled and deveined
1/3 cup grape tomatoes (2 good handfuls) or 1/3 cup cherry tomatoes (2 good handfuls)
1/2 ounce pine nuts (about a quarter of a small bag)
1/2 cup dry vermouth or 1/2 cup dry white wine
1 cup heavy cream
2 tablespoons basil, sliced in a chiffinade (about 10 to 12 large leaves)
1/3 lb pasta (I used spaghetti)
2 tablespoons chives, chopped
salt and pepper

Steps:

  • Start the water for the pasta. When it comes to a boil, add salt and pasta and cook until al dente.
  • In a skillet, heat olive oil and butter. When butter stops foaming, add shallots and garlic, and a pinch of salt and black pepper, and saute until shallots are tender.
  • Add shrimp, grape tomatoes, and pine nuts and cook until tomatoes burst.
  • Remove everything from pan and keep warm.
  • Return pan to heat and add vermouth. Allow to cook down for 1 minute while scraping up the brown bits from the bottom of the pan. Add the cream, and salt and pepper to taste. I used about 20 grinds of fresh ground black pepper and a healthy pinch of kosher salt. Stir well and cook until cream reduces and thickens. Stir often during this process so your cream doesn't stick to the bottom and burn.
  • To chiffinade the basil, pile the basil leaves neatly on top of each other, then roll the whole pile into a long, tight log. Cut the log into thin slices.
  • When sauce reaches desired thickness, add basil to cream sauce and stir well. Cook for a minute or two to let the basil infuse the cream.
  • Return shrimp and tomato mixture to pan and heat through.
  • Serve over your choice of pasta. Garnish with chives and parmesan cheese, if desired, and serve with crusty bread and a nice salad on the side.

1 1/4 lbs cheese tortellini, cooked
1/8 cup fresh parsley, chopped for topping
1/8 cup parmesan cheese, Freshly-grated for topping
1/4 cup olive oil
2 large garlic cloves, minced
2 cups plum tomatoes, peeled crushed drained (canned)
1 chicken bouillon cube, mashed
4 teaspoons dried basil
2 teaspoons chopped fresh parsley
1/4 teaspoon fresh ground black pepper
2 cups heavy cream
4 tablespoons parmesan cheese, freshly-grated

Steps:

  • Prepare tortellini as directed on package.
  • Chop tomatoes in chunky pieces.
  • Blend bouillon with basil, parsley and pepper into the tomatoes.
  • Saute the garlic in olive oil until just white.
  • Add to the sauce and bring just to a simmer.
  • When sauce is hot, add the cream to a non-aluminum skillet and bring to a slow boil and add the hot tomato sauce and cheese.
  • Stir well and blend the tortellini into the pan of tomato basil cream sauce.
  • Serve, topped with parsley and cheese.

2 lbs new potatoes, unpeeled and sliced
2 tablespoons dry white wine
2 tablespoons finely chopped shallots (chives work well too)
1 1/2 cups whipping cream
1/3 cup fresh basil
1/4 teaspoon salt
1 dash pepper

Steps:

  • Cook potatoes in boiling salted water to cover until they can be easily pierced with a fork.
  • Drain, cover and put aside to keep warm while you make the sauce.
  • Combine wine and shallots in a large saucepan; bring to a boil and cook for one minute.
  • Add whipping cream; return to a boil; reduce heat and simmer 20 minutes, stirring frequently.
  • Stir in basil, salt and pepper; spoon sauce over potatoes and serve immediately.

I just love the light green color and how well it displays over tri color or regular pasta, salmon and grilled chicken. I have been putting this on everything.

2 cups fresh basil leaves
4 cloves garlic, minced
¼ cup olive oil
2 ounces pine nuts
½ cup grated Parmesan cheese
salt and pepper to taste
1 pint light cream

Steps:

  • In a food processor, combine basil and garlic. Begin processing, and pour in olive oil in a thin stream. Process for about 40 seconds, or until mixture begins to emulsify. Add pine nuts and Parmesan, then blend for 1 minute.
  • Heat cream in a saucepan over low heat until simmering. Pour 1/2 of the hot cream into the processor with basil pesto, and pulse for 20 seconds to incorporate. Pour mixture back into cream, and simmer for 5 minutes, or until thickened.

4 medium red bell peppers
1 large lemon
1 cup sour cream
1/3 cup chopped fresh basil leaves plus 2 cups large leaves
1 boneless turkey breast half

Steps:

  • Roast peppers:
  • Roast peppers on racks of gas burners over high heat, turning with tongs, until skins are blackened, 5 to 8 minutes. (Alternatively, broil peppers on rack of a broiler pan about 5 inches from heat, turning occasionally, about 15 minutes.) Transfer to a bowl and let stand, covered, until cool enough to handle.
  • Peel peppers and discard stems and seeds. Finely chop peppers and pat dry, then season with salt and pepper.
  • Make sauce while peppers are standing:
  • Finely grate 2 teaspoons zest from lemon and squeeze 2 teaspoons juice.
  • Pureé zest, juice, sour cream, and 1/3 cup chopped basil in a food processor until smooth and season with salt and pepper. Transfer to a bowl and chill, covered, while preparing roulades.
  • Butterfly turkey:
  • Remove skin and tender from turkey breast, reserving tender for another use (discard skin). Cut turkey breast in half crosswise and chill 1 piece, covered, while working with the other (1 piece will be slightly larger).
  • Holding a sharp knife parallel to work surface and beginning on a long side, butterfly turkey by cutting horizontally almost in half (not all the way through), then opening it like a book.
  • Place between 2 sheets of plastic wrap and, with flat side of a meat pounder or with a rolling pin, pound turkey to slightly less than 1/4 inch thick (don't worry if you end up with a few small holes). Butterfly and pound remaining piece.
  • Make roulades:
  • Season turkey pieces well with salt and pepper and divide roasted peppers between them, spreading evenly and leaving a 1/4-inch border around edges. Top peppers with whole basil leaves. Beginning with a short side, roll up each turkey piece, gently pressing on filling while rolling (don't roll too tight, or filling will slip out of ends), and tie roulades crosswise with string. Season roulades with salt and pepper.
  • Prepare grill for cooking:
  • If using a charcoal grill, light a full chimney of charcoal, then put on 1 side of bottom rack. Charcoal will be ready for cooking when it turns grayish white, 10 to 15 minutes. If using a gas grill, light both sides.
  • Grill over direct heat:
  • When fire is medium-hot (you can hold your hand 5 inches above rack 3 to 4 seconds), place roulades on lightly oiled grill rack directly over fire and grill, uncovered, turning occasionally, until seared on all sides, about 15 minutes.
  • Then grill over indirect heat:
  • If using a gas grill, turn off 1 side of grill. Move roulades away from fire and grill over indirect heat, covered with lid, turning roulades occasionally, until an instant-read thermometer inserted diagonally 2 inches into several places on each roulade registers 170°F, 15 to 20 minutes (smaller piece will be done first). Transfer to a cutting board and let stand 10 minutes.
  • Discard string, being careful not to unroll turkey, and cut into 1/2-inch-thick slices with a serrated knife. Serve roulades warm with sauce.
