1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 fresh herb sprig, such as thyme, rosemary, sage or parsley, optional

Provided by Ina Garten

Categories     side-dish

Time 55m

Yield 6 servings

Number Of Ingredients 7

12 beets
3 tablespoons good olive oil
1 1/2 teaspoons fresh thyme leaves, minced
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons raspberry vinegar
Juice of 1 large orange

Steps:

  • Preheat the oven to 400 degrees.
  • Remove the tops and the roots of the beets and peel each one with a vegetable peeler. Cut the beets in 1 1/2-inch chunks. (Small beets can be halved, medium ones cut in quarters, and large beets cut in eighths.)
  • Place the cut beets on a baking sheet and toss with the olive oil, thyme leaves, salt, and pepper. Roast for 35 to 40 minutes, turning once or twice with a spatula, until the beets are tender. Remove from the oven and immediately toss with the vinegar and orange juice. Sprinkle with salt and pepper and serve warm.

Tips:

  • Choose fresh, firm beets: Look for beets that are smooth and free of blemishes. Avoid any beets that are soft or have cracks.
  • Trim the beets: Cut off the tops and bottoms of the beets, leaving about 1 inch of the stem attached. Also, remove any roots.
  • Scrub the beets: Use a vegetable brush to scrub the beets under cold water. This will help remove any dirt or debris.
  • Toss the beets in olive oil: Drizzle the beets with olive oil and toss them to coat. This will help them roast evenly.
  • Season the beets: Sprinkle the beets with salt, pepper, and any other desired seasonings. Common seasonings include garlic powder, onion powder, cumin, and paprika.
  • Roast the beets: Place the beets in a single layer on a baking sheet. Roast them in a preheated oven at 400°F for 45-60 minutes, or until they are tender when pierced with a fork.
  • Let the beets cool: Once the beets are roasted, remove them from the oven and let them cool slightly before handling.
  • Peel the beets: Once the beets are cool enough to handle, use your fingers to peel off the skin. The skin should come off easily.
  • Enjoy the beets: Roasted beets can be enjoyed on their own, or they can be added to salads, soups, and other dishes.
