This quiche recipe is so simple and so yummy...I believe it originated from Paula Deen. Our 2 favorite flavor combos would be- Asparagus with crab and Caramelized mushroom and onions

1 Tbsp flour
5 large eggs
1 1/4 c heavy cream
salt and pepper
1 deep dish frozen pie crust

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Combine eggs, flour, cream, salt and pepper in a blender until mixed well or mix well with a hand mixer. Set aside.
  • 3. Layer your ingredients of choice in the pie crust... ***You can use 2 reg. size pie crusts instead of the one deep dish, it works out well, especially since there always seems to be extra egg mixture. Perhaps I just use to many ingredients in the quiche...lol ***You can also use mini pie crusts and make mini quiches, using many flavors. Making everyone at the table happy!
  • 4. Pour egg mixture over the top.
  • 5. Bake 45 minutes or until egg mixture is set. Let rest 10-15 minutes. Cut into 8 wedges and serve.

Ingredient Ideas- -2c fresh chopped spinach, 1/2# of crumbled bacon, and 1 1/2c shredded swiss cheese. -1c cooked asparagus, 1/2# chopped crab, 3/4c shredded swiss cheese, and 3/4c of shredded cheddar. -1c carmelized mushrooms and onions, 1/2c grated parmesean cheese, 1/2c shredded swiss cheese and 1/2c shredded cheddar cheese. My mother Shelly Rice created the ultimate Basic Quiche recipe . . . almost anything can be added to make this basic quiche conform to your tastes, or it can be left plain for those with simple tastes.

2 cups half-and-half cream
⅛ teaspoon salt
¼ teaspoon white pepper
⅛ teaspoon ground nutmeg
4 ounces Jarlsberg cheese, shredded
2 ounces mozzarella cheese, shredded
1 (9 inch) unbaked pie shell

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, whisk together eggs and half-and-half. Season with salt, white pepper and nutmeg. Place shredded Jarlsberg and mozzarella in the pie shell. Pour egg mixture over cheese.
  • Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake for 25 minutes, or until crust is golden and filling is set. Allow to set 5 to 10 minutes before serving.

There are so many different types of quiches you can make, but first you have to know how to make the basic pie. You can use store-bought or homemade crust and the results will still be impressive for such a simple dish.

1 basic pie crust, store-bought is fine6 eggs or 4 whole eggs and 2 egg whites1 cup milk (any kind, but the higher fat the better)2/3 cup half-and-half or cream1 cup grated sharp cheese, such as Swiss, cheddar, Gruyère or crumbled fetaA pinch of grated nutmeg (optional)A teaspoon of fresh thymeA pinch of salt and pepperundefinedOptional additions:1 medium onion, chopped and sautéed1 cup mushrooms, sliced and sautéed1 cup ham, diced3 slices bacon, cooked and crumbled3/4 cup cooked spinach, drained and patted dry and choppedundefined

Steps:

  • Pre-heat the oven to 425ºF. Whisk the eggs in a large bowl and add the milk and half-and-half or cream. Whisk together thoroughly and then stir in the shredded cheese and herbs. Pour the mixture into the pie crust and bake for 30 minutes. If the quiche still has a liquidy and jiggly center, bake for another 10 minutes. If firm, remove from the oven and allow it to cool slightly before serving. Quiche can be served at room temperature. Tip: If your crust edges start to burn, wrap aluminum foil over the edges and keep cooking as instructed above. Note: If you want to add any of the optional additions mentioned above, simply stir them in when you are adding the cheese, but reduce the amount of cheese by 1/2 cup so everything fits!

This is a perfect base quiche recipe and it's all baked in a super flaky homemade pie crust. Use a combination of milk and heavy cream for the richest, creamiest filling and add your favorites such as bacon, feta cheese, ham, white cheddar cheese, crab meat or spinach.

1 unbaked Flaky Pie Crust (what I used) or All Butter Pie Crust*
4 large eggs
1/2 cup whole milk*
1/2 cup heavy cream or heavy whipping cream*
1/4 teaspoon each salt and pepper*
1 cup shredded or crumbled cheese such as feta, cheddar, goat cheese, or gruyere
up to 2 cups add-ins (see recipe note)
optional toppings for serving: extra cheese, chopped herbs, hollandaise sauce, & freshly ground pepper to taste

Steps:

  • I like to make sure my pie dough is prepared before I begin the quiche. Make pie dough the night before because it needs to chill in the refrigerator for at least 2 hours before rolling out and blind baking (next step).
  • On a floured work surface, roll out one of the disks of chilled dough (use the 2nd pie crust for another recipe). Turn the dough about a quarter turn after every few rolls until you have a circle 12 inches in diameter. Carefully place the dough into a 9-inch pie dish. Tuck it in with your fingers, making sure it is completely smooth. To make a lovely edge, I do not trim excess dough around the edges. Instead, fold the excess dough back over the edge and use your hands to mold the edge into a rim around the pie. Crimp the edges with a fork or use your fingers to flute the edges. Chill the pie crust in the refrigerator for at least 30 minutes and up to 5 days. Cover the pie crust with plastic wrap if chilling for longer than 30 minutes.
  • While the crust is chilling, preheat oven to 375°F (190°C).
  • Line the chilled pie crust with parchment paper. Fill with pie weights or dried beans. Make sure the weights are evenly distributed around the pie dish. Bake until the edges of the crust are starting to brown, about 15-16 minutes. Remove pie from the oven and carefully lift the parchment paper (with the weights) out of the pie. Prick holes all around the bottom crust with a fork. Return the pie crust to the oven. Bake until the bottom crust is just beginning to brown, about 7-8 minutes. Remove from the oven and set aside. (Crust can still be warm when you pour in the filling. You can partially pre-bake the crust up to 3 days ahead of time. Cover cooled crust tightly and refrigerate until ready to fill.)
  • Reduce oven temperature to 350°F (177°C).
  • In a large bowl with a handheld or stand mixer fitted with a whisk attachment, beat the eggs, whole milk, heavy cream, salt, and pepper together on high speed until completely combined, about 1 minute. Whisk in add-ins and then pour into crust.
  • Bake the quiche until the center is just about set, about 45-55 minutes. Don't over-bake. Use a pie crust shield to prevent the pie crust edges from over-browning. Allow to cool for 15 minutes. Top with optional toppings before slicing and serving, if desired. Or you can cool the quiche completely before serving- it's fantastic at room temperature!
  • This quiche makes great leftovers! Cover tightly and store in the refrigerator for up to 4 days.

One of my all time favorites! My mother got this recipe from her friend Betty, It's a make ahead recipe, to be frozen and used later. My mother used to make mass quantities and take them out whenever she needed for an easy meal or hors d'oeuvre. She also made it with the light cream instead of milk.

1 ½ cups shredded Swiss cheese
4 teaspoons all-purpose flour
½ cup cooked ham, diced
3 eggs
1 cup milk
¼ teaspoon salt
¼ teaspoon ground dry mustard
1 (9 inch) unbaked pie crust
2 tablespoons chopped fresh parsley, for garnish
2 tablespoons chopped pimento peppers, garnish

Steps:

  • In medium bowl, toss 4 teaspoons flour with the grated cheese. Sprinkle mixture into the pie shell. On top of cheese, sprinkle 1/2 cup of diced ham.
  • In medium bowl, combine eggs, milk or cream, and then add salt and mustard powder. Beat until smooth and pour over cheese and ham.
  • Put piece of plastic wrap large enough to overlap sides over top of quiche, then a piece of foil, and seal well around the edges. (plastic keeps the foil from sticking to the food). Place prepared quiche in freezer.
  • When ready to prepare, preheat oven to 400 degrees F (200 degrees C.) Remove foil and plastic wrap. Put foil around edge of crust to protect it.
  • Bake in the preheated oven for 60 minutes, or until filling is set and crust is golden brown. Garnish with parsley and pimiento if desired
