NIF'S VERY BASIC CHEESE QUESADILLAS

Nif's Very Basic Cheese Quesadillas image

Only 3 ingredients but my youngest DS loves it! Like the name says, it is very basic and is also very low maintenance. I would saute meat and/or veggies and have nonfat sour cream, salsa or guacamole to dip it in, but this is the basic-est version of the quesadilla. You can also use this as an appetizer and cut into thinner wedges. My DS can eat the whole thing now for dinner, but I thought I would list 2 servings. Enjoy!

Time 12m

Yield 2 serving(s)

Number Of Ingredients 3

1 1/2 cups low-fat cheddar cheese, grated
2 (10 inch) flour tortillas, soft (I use whole wheat)
low-sodium taco seasoning, to taste

Steps:

  • Place one tortilla in a nonstick pan and set on stove with the burner off. Sprinkle with cheddar cheese and taco seasoning.
  • Turn heat to medium and place other tortilla on top. After about 5 minutes, gently lift edge of quesadilla to see if bottom tortilla is starting to brown. It should take a little longer, but keep a close eye on it. When it is a light golden colour, slide quesadilla on to a plate.
  • Flip quesadilla into the pan and brown other side, checking frequently. Slide on to a cutting board. Let sit for a couple of minutes and then cut into quarters.

Time 15m

Number Of Ingredients 4

4 flour tortillas, 12 inch
1 c shredded monterey jack cheese
1 c freshly made salsa
11/2 c cooking oil

Steps:

  • 1. Lay out tortilla and cover half with 1/4 cup cheese and 1/4 cup salsa. Fold the other half pressing down. Repeat with remaining tortillas.
  • 2. Heat a wide saute' pan over medium high heat. Heat 2 tablespoons of the oil in the pan and put in tortilla.
  • 3. After 3 to 4 minutes, carefully flip it over the bottom side should be golden brown.
  • 4. Continue to cook for 3 to 4 more minutes, then remove the quesadilla and keep it warm.
  • 5. Repeat with the remaining tortillas, adding oil as needed.
  • 6. You can add many things inside or outside the quesadilla.
  • 7. INSIDE: You can add cooked chicken, beef, black beans or shrimp.
  • 8. OUTSIDE: You can serve them with sour cream guacamole, and more salsa.

Tips:

  • Choose the right cheese: Use a cheese that melts well, such as cheddar, Monterey Jack, or mozzarella. Avoid cheeses that are too hard or crumbly, as they will not melt evenly.
  • Grate your own cheese: Pre-shredded cheese contains additives that can prevent it from melting smoothly. Grating your own cheese ensures that it will melt evenly and consistently.
  • Use fresh tortillas: Fresh tortillas are more pliable and less likely to break when you fold them. If you are using store-bought tortillas, warm them up in the microwave or on a comal before using them.
  • Don't overcrowd the pan: When cooking quesadillas, be sure to leave enough space between them so that they can cook evenly. If you overcrowd the pan, the quesadillas will not cook properly and will be more likely to stick to the pan.
  • Cook quesadillas over medium heat: Medium heat will help to prevent the tortillas from burning and will allow the cheese to melt evenly. If you cook quesadillas over high heat, the tortillas will brown too quickly and the cheese will not have time to melt.
  • Flip quesadillas carefully: When flipping quesadillas, use a large spatula to carefully lift them off the pan. Be careful not to break the tortillas.

Conclusion:

Quesadillas are a quick and easy meal that can be made with a variety of ingredients. They are perfect for lunch, dinner, or a snack. By following these tips, you can make perfect quesadillas every time. So next time you are looking for a delicious and satisfying meal, give quesadillas a try!
