CINNAMON GRAHAM CRACKER CRUST
Originally from the Fanny Farmer Baking Book. I use it for my Lemon Meringue and Key Lime Pies. I don't usually add the cinnamon but it is an option.

Yield 1 8 or 9-inch pie crust, 8 serving(s)

Steps:
- Combine cracker crumbs and sugar in a bowl, then add the butter and optional cinnamon.
- Stir with a fork until crumbs are moistened.
- Empty the mixture in the pie plate, then pat and press mixture evenly all around the bottom and sides of the plate.
- Before filling, either bake in a preheated 350°F oven for 8-10 minutes or chill for about an hour.
- (You simply want the crust to be firm and both baking and chilling will do that, although I prefer baking.).
Tips:
- Use a food processor or blender to crush the graham crackers. This will make the crumbs more uniform and easier to press into the pan.
- If you don't have a food processor or blender, you can crush the graham crackers in a resealable plastic bag with a rolling pin. Just be sure to crush them until they are very fine.
- Use melted butter to bind the graham cracker crumbs together. This will help the crust hold its shape and prevent it from crumbling.
- Press the graham cracker crumbs firmly into the bottom and sides of the pan. This will help to ensure that the crust is even and sturdy.
- Chill the crust for at least 30 minutes before filling it. This will help the crust to set and prevent it from becoming soggy.
Conclusion:
Graham cracker crust is a classic dessert ingredient that is easy to make and can be used in a variety of recipes. With just a few simple ingredients, you can create a delicious and versatile crust that is perfect for pies, tarts, cheesecakes, and more.
