In Japan agar and the desserts made from it are called Kanten. Vary the amount of agar depending if you like a soft or a firm gel. Note if acidic fruit you may need more agar.

3 cups fruit juice
2 tablespoons agar-agar flakes
2 cups berries or 2 cups fruit, see note

Steps:

  • fruit can be sliced or cubed. You may want to strain the cooked mix to remove undissolved agar but you don't have to do so. You can also soak the agar but you don't have to.
  • In med saucepan combine the first two ingredients. Boil over medium heat, stir often then when it boils reduce heat, keep stirring and simmer, stirring often until agar dissolves. You are looking at about 5 minutes.
  • Remove from heat and cool about 20 minutes. You want it warm. Stir occasionally while cooling.
  • Arrage fruit in the mold or dish you are using. IF not using individual molds use about 8 inch baking dish. Pour gel over fruit. Let set in refrigerator for at least 1 hour.
  • Note you can use 9 inch dish and chil warm mix in it til set. Then cut into cubes and toss with fruit.
  • Prep is chill time. Cooking is cook and sitting time.

1 quart apple juice
1/4 cup agar-agar flakes
1 pint berries
2 tablespoons maple syrup (optional)

Steps:

  • Soak the agar flakes and one pint of apple juice in a saucepan for 10 - 15 minutes.
  • Wash and hull berries.
  • In a blender puree berries with the remaining juice and maple syrup if you are using it. Set aside for now.
  • Now, bring agar mixture to a boil then turn down heat and simmer, stirring frequently, until all agar is dissolved.
  • When all is dissolved, allow the juice mixture to cool slightly, and then pour it into the blender with the pureed berries mix and blend briefly to combine.
  • Pour contents of blender into your molds and allow to cool in the refrigerator until the kanten sets up.
  • To serve:.
  • If kanten was chilled in a baking dish, cut into portion-sized squares. Garnish with additional berries and desired whipped products such as whipped tofu cream or whipped cream depending on your diet.
  • Note: One tablespoon of flakes should be used per cup of liquid unless using a citrus or pineapple juice then it might need to be increased because it is more acidic.
