1 cup unsweetened cocoa powder (natural or Dutch process)
2 1/2 cups all-purpose flour
2 cups sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
3 large eggs, at room temperature
3/4 cup vegetable oil
1/2 cup sour cream
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Coat two 9-inch-round cake pans with cooking spray and line the bottoms with parchment paper.
  • Whisk the cocoa powder and 1 1/2 cups boiling water in a medium bowl until smooth; set aside. Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl until combined. Add the eggs, vegetable oil, sour cream and vanilla and beat with a mixer on medium speed until smooth, about 1 minute. Reduce the mixer speed to low; beat in the cocoa mixture in a steady stream until just combined, then finish mixing with a rubber spatula. (The batter will be thin.)
  • Divide the batter between the prepared pans and tap the pans against the counter to help the batter settle. Bake until a toothpick inserted into the middle comes out clean, 30 to 40 minutes. Transfer to racks and let cool 10 minutes, then run a knife around the edge of the pans and turn the cakes out onto the racks to cool completely. Remove the parchment. Trim the tops of the cakes with a long serrated knife to make them level, if desired.

1/2 cup shortening
3 cups sugar
6 large eggs, room temperature
3 cups all-purpose flour

1 cup 2% milk
1 tablespoon vanilla extract
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, shortening and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Combine flour, baking powder and cocoa. Combine milk and vanilla. Add dry ingredients to creamed mixture alternately with milk mixture. Mix well. , Pour into greased 10-in. tube pan. Bake until a toothpick inserted in the center comes out clean, 70-80 minutes. Cool for 15 minutes before removing from pan to a wire rack to cool completely. If desired, sprinkle with confectioners' sugar.

I found this is an older Southern Living cookbook- "Heritage Cakes" . This is a basic yellow cake that yields 2 layers. The recipe is as found: my only changes have been direction clarifications. For Chocolate Cake: Add 3 ( 1 oz.) squares of unsweetened choclate, melted in a double boiler, to the creamed mixture.

3 1/2 cups all purpose flour, plus some for dusting pans
1/2 teaspoon salt
4 eggs
4 egg yolks
1 tablespoon vanilla
1 1/2 cups unsalted butter, softened
2 cups sugar
1 (12 ounce) bag semisweet chocolate chips

Steps:

  • Heat oven to 325°F Coat TWO 9x5x3 inch loaf pans with non stick spray and dust lightly with flour (shake off excess); set aside.
  • Stir together flour and salt; set aside.
  • In a small bowl, stir together eggs, egg yolks, and vanilla; set aside.
  • Mix butter and sugar together on medium high speed for 6 minutes or until very light and fluffy.
  • Reduce speed to medium and gradually pour in egg mixture then increase speed to medium high and beat 3 minutes or until light and fluffy.

Mininum ingredients, easy to make and healthier than many oily cake mixes. I am posting this so that I can get the nutritional information. It makes a great vegan cake, brownie, muffins or pudding depending on what you add. For a denser fudge cake add up to one cup of dark chocolate chips. some other favourites of mine are 2/3 cup of chopped nuts, cherries, coconut etc. You can reduce the cocoa slightly for a less chocolately cake. Also you can use normal wheat flour. Without any oil it really does benefit from some chocolate chips. Another thing I like to do is make up the dry mix in batches and put it in jars in bags and then all I need to do is sift it into the wet mix or give the dry mix away as gifts in nice jars. It is also nicer the nice down and because of the moistness from the applesauce it keeps well, freezer and defrosts and heats up beautifully especially if making puddings.
