Some recipes use sugar in their recipes however honey gives it a more intense flavor. If you have any fresh ginger handy, finely grate about 1 tablespoon of it and boil it with the barley for a gingery kick. Found on the internet. Enjoy!

BARLEY WATER

From "To Set Before a Queen"--a cookbook written by a former cook for Princess Elizabeth's household (Queen Elizabeth before she was crowned, that is). It's an interesting cookbook, with some good recipes and some interesting anecdotes. She claims that the royal family were all "addicted" to this recipe. She also says that this is the recipe she was given to use at Clarence House. I've tried it and like it quite well myself. Posting here as it's an older cookbook and I don't want to lose the recipe. Since the rinds are used, it's best if you can find organic fruits without oils or waxes or chemicals on the rinds. Failing that, be sure to clean them very well--I soak them in vinegar water, then rinse them under very hot water. I can't recall the amount you get at the end, so I am estimating. Times don't include cooling time.

BARLEY WATER

Categories     Non-Alcoholic     Lemon     Barley     Drink

Yield Serves 2 to 4.

Number Of Ingredients 4

2 ounces pearl barley
3 teaspoons sugar
Peel of 1/2 lemon
1 pint boiling water

Steps:

  • Put barley in a small saucepan and cover with cold water. Bring to a boil and boil for about 3 minutes. Strain barley and put in a jug with sugar, lemon peel and boiling water. Cover and let stand until cold. Strain. Serve plain, or add lemon juice and sugar to taste, or dilute half and half with milk, or serve over ice. It is usually served in small tumblers

Tips:

  • Choose the Right Barley: Use hulled barley for a chewier texture and pearl barley for a softer texture.
  • Rinse and Soak: Rinse the barley thoroughly before cooking to remove any impurities. Soaking the barley overnight or for at least 4 hours helps reduce cooking time and improves texture.
  • Use the Right Ratio of Water: The ideal water to barley ratio is 4:1 for hulled barley and 3:1 for pearl barley.
  • Season to Taste: Barley water can be seasoned with various ingredients such as salt, pepper, ginger, cinnamon, cardamom, and honey. Experiment with different flavors to create a drink that suits your taste.
  • Add Sweeteners: If you prefer a sweeter barley water, add natural sweeteners like honey, maple syrup, or stevia to taste.
  • Chill and Enjoy: Once cooked, let the barley water cool down completely and refrigerate it for a refreshing drink. You can also add ice cubes or serve it warm.
