This recipe is from a dear friend, and it has become one of my weekly comfort meals in the winter. It is absolutely delicious, and you can tweak it all you like. It is very fast to put together and almost completely fat-free. I love this soup.

6 cups chicken broth or 6 cups vegetable broth
1/2 cup medium barley
1 tablespoon olive oil
1 tablespoon unsalted butter
1 medium onion, diced
1 small celery rib, diced
6 cloves garlic, minced
2 tablespoons minced parsley
1 pinch red pepper flakes
1 1/2 teaspoons dried marjoram
1 teaspoon dried basil
1 teaspoon fresh rosemary, minced
2 medium carrots, sliced
2 medium potatoes, 1/2 inch dice
grated parmesan cheese

Steps:

  • Bring the broth to a boil and add the barley.
  • Stir, then let simmer for 30 minutes, covered.
  • Meanwhile, heat the olive oil and butter in a saute pan over medium heat.
  • Add the onion, celery, garlic, parsley, red pepper flakes, and the remaining herbs and saute until the vegetables are softened but not browned (about 5-6 minutes.) When the barley has cooked for 30 minutes, add this mixture to it along with the carrots and potatoes.
  • Cook everything together at a simmer for another 30 minutes.
  • Serve with a generous sprinkle of parmesan on top.

10 cups homemade chicken broth
1 cup pearl barley
2 tablespoons olive oil
2 tablespoons butter
1 large onion, cut in 1/2 inch dice
1 large celery rib, sliced thinly
1/4 cup finely chopped flat leaf parsley
1 tablespoon fresh marjoram, chopped
1 teaspoon chopped fresh rosemary
2 medium boiling potatoes, peeled and diced
2 medium carrots, peeled and thinly sliced
salt and pepper
1/2 cup grated parmesan cheese

Steps:

  • Bring the broth to a boil in a large soup pot over medium-high heat.
  • Stir in the barley, 1/4 cup at a time.
  • Reduce the heat to a very slow but steady simmer.
  • Cover and cook until the barley is almost tender, about 30 minutes.
  • Heat the oil and butter in a medium size skillet over med-high heat.
  • Add the onion, celery, parsley, marjoram and rosemary and saute until the onion begins to turn golden, about 5 minutes.
  • Transfer the mixture to the soup pot with the barley, scraping out the skillet with a rubber spatula.
  • Add the potatoes and carrots and cook until tender, about 30 minutes.
  • Season with salt and pepper.
  • Serve in warmed bowls with a sprinkling of grated parmesan.

1 large onion, diced
2 celery stalks, diced
4 cloves garlic, minced
1/4 cup vegetable oil
3 quarts vegetable stock
1/2 cup pearl barley, rinsed
2 carrots, diced
2 large Idaho potatoes, peeled and diced
1/4 teaspoon black pepper
salt, to taste

Steps:

  • Saute the onion, celery and garlic in oil until the vegetables become translucent. Add the stock, barley and carrots. Simmer gently, stirring occasionally, about 2 hours. Add the potatoes after the soup has cooked 1 hour. If the soup gets too thick, add more stock or water. Taste for seasoning and add salt and pepper as needed.

1 c pearl barley

2 Tbsp unsalted butter
3 small leeks white part only, well cleaned & diced
1 large stalk celery with leaves thinly sliced
1/4 c flat leaf parsley chopped fine
1 tsp finely chopped fresh rosemary or 1/2 tsp dry
2 medium potatoes, peeled and cubed 1/2"
2 large carrots peeled and thinly sliced
1/2 c freshly grated parmesan cheese (optional)

Steps:

  • 1. Bring the broth to a boil in a large soup pot over medium-high heat. Stir in the barley slowly and when it begins to boil, reduce the heat to slow but steady simmer. Cover and cook until the barley is almost tender about 45 minutes.
  • 2. Heat the oil and butter in medium skillet over medium-high heat. Add the onion, celery, parsley & rosemary and saute until the onion begins to turn golden, around 5 minutes. Transfer this into the soup pot mixture, scraping skillet with rubber spatula.
  • 3. Add the potatoes and carrots to soup, cook till tender about 30 min. Season with salt & pepper to taste. Serve in warmed bowls and sprinkle with cheese if desired.

2 tablespoons butter
1 Spanish onion, chopped
6 cups reduced-fat chicken broth
5 carrots, peeled and sliced
3 small potatoes, peeled and sliced
1 teaspoon herbes de Provence
1 pinch dried thyme
1 bay leaf
salt and pepper to taste
¼ cup heavy cream
8 sprigs parsley

Steps:

  • Melt the butter in a large pot over low heat. When the butter begins to foam, add the onion; cook until the onion begins to turn translucent, 3 to 4 minutes.
