A vegan recipe, that my sister makes. You can sub almonds for the pine nuts if you prefer.This is a crockpot meal.

1 cup uncooked pearl barley
1 1/2 cups V8 vegetable juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 medium celery ribs, sliced
1 medium bell pepper, chopped
1 medium onion, chopped
1 (14 1/2 ounce) can ready to serve vegetable broth
4 medium green onions, sliced
1/4 cup pine nuts, toasted*

Steps:

  • Mix all ingredients except green onions and nuts in a 3 1/2 to 6 quart slow cooker.
  • Cover and cook on low heat 6 to 8 hours or until barley is tender, don't cook too long or barley will be gummy.
  • Stir in green onion and nuts.
  • *To toast nuts, bake uncovered in ungreased pan in 350F oven about 10 minutes, stir occasionally, until golden brown.

1 1/2 cups 8 vegetable juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 stalks celery, sliced (1 cup)
1 medium bell pepper, chopped (1 cup)
1 medium onion, chopped (1/2 cup)
1 (14 ounce) can vegetable broth
4 medium green onions, sliced (1/4 cup)
1/4 cup pine nuts, toasted

Steps:

  • Mix all the ingredients except green onions and nuts on a 4-6 qt crockpot or slow cooker.

2 celery ribs, chopped
2 medium carrots, finely chopped
7 green onions, chopped
4 garlic cloves, minced
1 tablespoon butter
1-1/2 cups uncooked medium pearl barley
1/2 teaspoon salt
1/8 teaspoon pepper
4-1/2 cups chicken broth, divided
2 tablespoons minced fresh parsley
1/2 cup slivered almonds

Steps:

  • In a large ovenproof skillet, saute the celery, carrots, onions and garlic in butter until tender. Stir in the barley, salt and pepper. Stir in 2-1/2 cups broth. 1 cup medium pearl barley
1/2 cup slivered almonds or pine nuts
1/4 cup butter, cubed
1/2 cup minced fresh parsley

2 cans (14-1/2 ounces each) beef broth

1 1/2 c v-8 vegetable juice
1/2 tsp salt
1/4 tsp pepper
2 medium stalks celery, sliced

1 can(s) (14-1/2 oz.) ready-to-serve vegetable broth (or chicken broth)
4 medium green onions, sliced
1/3 c pine nuts, toasted

Steps:

1 cup Pearl Barley washed and strained
1 medium onion
1/2 cup chopped fresh parsley
1 cup toasted pine nuts
1/2 cup chopped green onions
1 cube of butter (won't use all of it)
2 cans chicken broth
2 packages of mushrooms (or as many as you want)
salt and pepper to taste

Steps:

  • Toast pine nuts in butter, set aside in casserole dish Saute mushrooms in butter and add to casserole dish Add parsley and chopped green onions to casserole dish Saute chopped onion with barley in 4T butter until barley is lightly toasted and add to casserole dish Boil 2 cans of chicken broth and mix all ingredients in casserole dish Cook for 1hr and 10 minutes at 375 degrees. 1 1/3 cups chicken broth

  • Preheat your oven to 350°; rinse the barley in cold water and drain.
