1-1/2 pounds beef stew meat, cut into 1/2-inch cubes
1 tablespoon canola oil
1 medium onion, chopped
3 cans (14-1/2 ounces each) beef broth
1 cup medium pearl barley
1 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon pepper
4 medium carrots, sliced
2 tablespoons chopped fresh parsley

Steps:

  • In a large saucepan or Dutch oven, brown meat in oil in batches. Remove and set aside. In the same pan, saute onion until crisp-tender. Add the broth, barley, seasonings and beef; bring to a boil. Reduce heat; cover and simmer for 1 hour. , Add carrots; bring to a boil. Reduce heat; cover and simmer 30-40 minutes or until meat and carrots are tender. Add parsley just before serving.

1 pound stew beef
1 (28-ounce) can crushed tomatoes
3 cups AB's Beefy Broth, recipe follows
1/2 cup pearl barley
3 large carrots, peeled, halved and cut into 1/2-inch slices
2 stalks celery, cut into 1/2-inch slices
1 large russet potato, peeled and diced
1 medium yellow onion, diced
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon dried marjoram
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Malt, balsamic or sherry vinegar, for serving
Vegetable oil
Salt and pepper
3 pounds combined beef shank and oxtail pieces
2 onions, quartered
2 ribs celery, halved
2 carrots, halved
3 cloves garlic
1 bunch fresh parsley
1 teaspoon whole black peppercorns
2 quarts water

Steps:

  • Brown the beef in the pressure cooker over high heat, 5 to 7 minutes. Drain off any fat. Add the tomatoes, broth and barley and return to high heat. Close the pressure cooker and bring to up to full pressure. Reduce the heat until the cooker barley hisses, and cook for 10 minutes.
  • Release the pressure using the cooker's release device (read the manual), or cool the cooker by running cold water over the lid for 30 seconds. Open carefully, remove the lid and add the vegetables, herbs, salt and pepper.
  • Put the lid back on the pressure cooker and heat to full pressure over high heat. Reduce the heat to maintain pressure and cook another 10 minutes. Release the pressure as above. Remove the lid and cool for 5 minutes, and then serve with vinegar.
  • Place the pressure cooker over high heat. Oil and salt the oxtail and shank pieces then sear in batches. Add the remaining ingredients and cover with water, being careful not to fill above the cookers "maximum fill" line. Bring to a boil and skim off any foam that gathers at the surface. Cover and lock the lid. Once the pressure builds up inside the cooker, reduce the heat so that you barely hear hissing from the pot. Cook for 50 minutes.
  • Release the pressure using your cooker's release device (read the manual), or cool the cooker by running cold water over the lid for 30 seconds. Carefully open the lid and strain , squeezing the solids before feeding to the compost pile or the dogs. Strain through a fine sieve or several layers of cheesecloth. Season and serve or use as a base for other soup recipes.

2 thick slices beef shank
kosher salt and ground black pepper to taste
1 tablespoon vegetable oil
1 large onion, diced
4 cloves garlic, minced
2 tablespoons tomato paste
4 cups chicken broth, or more as needed
⅔ cup diced celery
⅔ cup diced carrots
1 bay leaf
¼ teaspoon dried rosemary
½ cup pearl barley
1 tablespoon chopped fresh parsley, or to taste
1 tablespoon freshly grated raw horseradish, or to taste

Steps:

  • Season beef all over with kosher salt and black pepper.
  • Heat vegetable oil in a large pot over high heat. Cook beef in hot oil until browned on both sides, about 10 minutes. Transfer beef to a plate.
  • Reduce heat to medium, and stir onion into the same pot with a pinch of salt. Cook and stir until onion is soft and translucent, 4 to 5 minutes. Stir garlic into onion; cook and stir until fragrant, about 1 minute.
  • Stir tomato paste into onion mixture; cook and stir until tomato paste is brick red, 2 to 3 minutes. Pour broth into onion mixture. Add celery, carrots, bay leaf, and rosemary. Return beef with any accumulated juices to pot; push beef down to cover with cooking liquid.
  • Bring broth mixture to a simmer, reduce heat to low, cover the pot, and cook until beef is fork-tender, 2 to 3 hours. Transfer beef to a bowl.
  • Pour barley into cooking liquid, bring to a simmer, and cook until barley is tender, about 45 minutes. Return beef to pot, cover the pot, and cook until heated through, about 10 minutes. Season with salt. Ladle stew into bowls and garnish with parsley and horseradish.

Sunny's Beef and Barley Stew with Crusty Pepper Bread image

1 tablespoon butter
1 tablespoon olive oil
2 pounds USDA choice beef chuck, cut into 1-inch cubes
Salt and freshly ground black pepper
1/2 cup baby-cut carrots, sliced into 1/4-inch discs
1 parsnip, peeled and chopped
1 stalk celery, trimmed and chopped
1/2 cup chopped onions
1/2 teaspoon dried thyme
1/2 teaspoon Hungarian paprika
2 cups dry red wine, such as shiraz
1 or 2 bay leaves
4 cups beef broth
1 cup pearled barley
Chopped parsley, for garnish
Crusty Pepper Bread, for serving
Half a French baguette, cut diagonally into 1-inch slices
6 to 8 tablespoons olive oil
Salt and coarsely ground black pepper

Steps:

  • Preheat the oven to 275 degrees F.
  • Trace and cut a piece of parchment paper to fit the size of the top of the Dutch oven to use as a lid. Set aside.
  • In a Dutch oven over medium-high heat, add the butter and olive oil. Season the beef cubes with salt and pepper and, when the pan is hot enough, add the beef. Be careful to cook the beef in batches if there isn't enough space. (Overcrowding will cause steaming, not searing.) Sear the cubes on each, and side then remove to a plate with a slotted spoon. In the fat left from the searing, add the carrots, parsnip, celery, onions, thyme, paprika, a pinch of salt and a grind or 2 of pepper. Saute until tender, about 8 minutes. Raise the heat and pour in the wine. Using a wooden spoon, scrape up any bits on the bottom of the pan. Raise the heat to a simmer, and then add the beef cubes back to the pot along with the bay leaves and beef broth. Cover with the prepared parchment paper and cook in the oven for 2 hours.
  • At the 2 hour mark, remove the parchment, taste, and season with salt, if needed. Add the barley, and stir in 1 cup of water if the stew looks too dry. Cook, covered with the actual lid for this step, until the barley is cooked through and tender, 40 to 45 minutes. Remove from the oven and garnish with chopped parsley. Serve with Crusty Pepper Bread.
  • Preheat the oven to 350 degrees F.
  • Brush both sides of the bread slices with olive oil and season with a pinch of salt and pepper on both sides. Place on a baking sheet and bake until the edges of the bread just begin to turn golden, about 10 minutes.

2 cups baby carrots
1 (10 ounce) package fresh mushrooms, sliced (I use 1 lb. (or more)
1 1/2 lbs boneless beef chuck steaks, cut into 1-inch cubes
1 (1 ounce) envelope Lipton Recipe Secrets onion soup mix
2 tablespoons Worcestershire sauce
2 (4 1/2 ounce) cans beef broth
1 (14 1/2 ounce) can tomatoes, diced and undrained
2 cups water
3/4 cup green peas, frozen
3/4 cup pearl barley, uncooked
salt and pepper

Steps:

  • In crock pot layer carrots, mushrooms, and beef.
  • Combine soup mix, broth, Worcestershire, tomatoes, water, and barley, pour over beef.
  • Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours.
  • Stir in peas and cook, covered 5 minutes or until heated through.
  • Season if desired with salt and pepper.
  • I serve this with a crusty bread.

This comes from my grandmother's shoebox of recipes -- and it is good! Perfect in the winter with a nice green salad and plenty of crusty bread. This makes a huge pot -- I usually freeze some to have on hand for a quick dinner. I have also added leftover corn or green beans to this and it is still fabulous. It is not a lot of work -- just the simmering takes some time. But it is worth it.

1 large onion, chopped coarsely
2 garlic cloves, mashed
2 lbs stewing beef, cubed (chuck or round)
2 tablespoons olive oil
1 (10 1/2 ounce) can condensed beef broth (I have used 4 beef bouillon cubes dissoved in 1 1/4 cup boiling water for this)
4 cups water
2 bay leaves
1 1/2 tablespoons Worcestershire sauce
salt and pepper
6 carrots, peeled and cut into bite-size chunks
4 celery ribs, trimmed and cut into bite-size chunks
1 (4 ounce) can mushrooms
1 cup pearl barley, cooked to package directions

Steps:

  • Heat olive oil in a large heavy pot.
  • Saute chopped onion, mashed garlic and beef until beef is browned on all sides.
  • Add beef broth, water, bay leaves, Worcestershire sauce and salt and pepper.
  • Bring mixture to a boil, then lower heat to a simmer.
  • Simmer 1 1/2 hours.
  • Add carrots and celery and simmer an additional 30 minutes.
  • You may have to add some more water at this point.
  • Add mushrooms and cooked barley, simmer another 15 minutes.
  • Remove bay leaves and serve.

1+3/4 lb boneless beef chuck, trimmed and cut into 1-inch cubes
kosher salt and freshly ground pepper
5 tbs all-purpose flour
4+1\2 tbs unsalted butter (1+1\2 tbs softened
1 tbs extra-virgin olive oil
2 large leeks (white and light-green parts only), halved and thinly sliced
2 medium carrots, cut into 1-inch pieces
2 medium ribs selery, chopped
1 cup dry white wine
6 cups lower-dalt chicken broth
2/3 cup pearl barley
3 dried bay leaves
1 tbs finely chopped fresh sage
1 tsp nutmeg
1 small butternut squash 9about 1+1\2 lb) peeled, seeded and cut into 1\2-inch cubes--about 3+1\2 cups
1\4 cup chopped fresh flat-leaf parsley ( I used a hand full of dried)
1\4 cup half-half

Steps:

  • Position a rack in center of oven and heat to 350 Season the beef with 1 tsp salt and 1\4 tsp pepper and then toss in large bowl with 2 tbs flour. Heat 1tbs of the butter and oil in a 5+1\2-6 qt Dutch oven over medium-high heat. Cok half the beef until browned on several sides. Using slotted spoon, transfer the beef to a plate, Repeat with teh remaining beef Melt 2 tbs of butter in the pot. Add the leeks, carrots, celery and a pinch of salt, reduce heat to medium and cook, stirring occasionally, until softened, about 10 minutes. Add the wine and cook , scraping up any browned bits with a wooden spoon, until evaporated, 7 to 8 minutes. Stir in remaing 3tbs flour and cook for one minute. Whisk in 5 cups broth, stir in the barley, bay leaves,sage ,nutmeg, 1\2 tsp salt and the beef along with any accumalted juices. Bring to a boil. Cove the pot snugly with foil and then a tight fitting lid and braise in the oven until the beef is almost tender, about 1 hour. Stir in the squash and remaining 1 cup broth. Cover with foil and lid and continue to braise until beef and squash are very tender, about 30 mintues more. Remove and dicard bay leaves from the stew an stir in the parsley and half and half. Season to taste with salt and pepper if want the croutons 3oz crumbled blue cheese ( about 3/4 cup) 3 tbs finely chopped walnuts 18 1\2 inch thick baguette slices In a small bowl combine the softened 1+1\2 tbs buter with the blue cheese, walnuts and 1\2 tsp petter. Spread mixture evenly onto the baguette slices. Transer to a baking sheet Position a rack about 8in from the broiler and heat the broiler on high. Broil until deep golden-brown and crisp (2-3 minutes) Serve with the stew

This stew I make all the time, in the fall and winter time, so now is the time to make it again. Made it for my Uncle and Aunt these last few weeks, they loved it.

2 lb beef stew meat cubed
1/4 c flour
2 Tbsp vegetable oil
3 c water
1 pkg beef stew seasoning
5 c mixed fresh vegetables, like potatoes, carrots peas, onions, celery
1/4 c barley, uncooked

Steps:

  • 1. Coat stew meat with flour and brown in the oil. After meat has browned add water and barley, cover with enough water and bring to a boil, keeping it at a medium boil and boil until meat is tender, this may take up to 3 or 4 hours. Then place in a crock pot. Add everything else and cover with water.
  • 2. In crock pot, cook on high for about 1 1/2 hours more or until the vegetables are tender.
  • 3. Serve with a good crusty roll or bread. Enjoy
