Steps:
- Heat the olive oil and butter in a medium saucepan over medium heat. Add the leeks and fennel and saute for 5 to 7 minutes, until tender. Add the rice and stir for a minute to coat with the vegetables, oil, and butter. Add the white wine and simmer over low heat, stirring constantly, until most of the wine has been absorbed. Add the chicken stock, 2 ladles at a time, stirring almost constantly and waiting for the stock to be absorbed before adding more. This process should take 25 to 30 minutes.
- Meanwhile, cut the asparagus diagonally in 1 1/2-inch lengths and discard the tough ends. Blanch in boiling salted water for 4 to 5 minutes, until al dente. Drain and cool immediately in ice water. (If using fresh peas, blanch them in boiling water for a few minutes until the starchiness is gone.)
- When the risotto has been cooking for 15 minutes, drain the asparagus and add it to the risotto with the peas, lemon zest, 2 teaspoons salt, and 1 teaspoon pepper. Continue cooking and adding stock, stirring almost constantly, until the rice is tender but still firm.
- Whisk the lemon juice and mascarpone together in a small bowl. When the risotto is done, turn off the heat and stir in the mascarpone mixture plus the Parmesan cheese and chives. Set aside, off the heat, for a few minutes, sprinkle with salt and pepper, and serve hot with a sprinkling of chives and more Parmesan cheese.
CHIVE RISOTTO CAKES ( INA GARTEN BAREFOOT CONTESSA )
Recipe from Barefoot Contessa Ina Garten's book "Back to Basics" Oct. 2008. A great recipe that makes you not have to wait to make risotto to have leftovers to have Risotto cakes. These are made from scratch. Panko is a key ingredient so don't just use regular bread crumbs. As Ina notes, "Panko, or Japanese bread flakes, have a crisper, lighter texture than regular bread crumbs." These can be assembled ahead and then fried right at meal time. She says"the yogurt, chives, and Italian Fontina give these a delicious creamy interior, and the panko gives them a wonderful crunchy crust." Enjoy! ChefDLH

Tips:
- Use high-quality ingredients, especially the Parmesan cheese and butter. Fresh chives will also make a big difference in the flavor of the risotto cakes.
- Make sure the rice is cooked al dente before you add the other ingredients. This will help the risotto cakes hold their shape when they are fried.
- Be careful not to overmix the risotto. Overmixing will make the risotto sticky and difficult to work with.
- When you are forming the risotto cakes, use a light touch. Pressing the cakes too firmly will make them dense and heavy.
- Fry the risotto cakes in a hot skillet until they are golden brown and crispy on the outside. This will help keep them from falling apart.
- Serve the risotto cakes immediately with your favorite dipping sauce. They are also delicious topped with a dollop of sour cream or yogurt.
Conclusion:
Barefoot Contessa's Chive Risotto Cakes are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlucks. With a few simple ingredients and a little bit of time, you can create a dish that is sure to impress your guests.
