Time 1h5m

Yield 20 large brownies

Number Of Ingredients 11

1 pound unsalted butter
1 pound plus 12 ounces semisweet chocolate chips
6 ounces unsweetened chocolate
6 extra-large eggs
3 tablespoons instant coffee granules
2 tablespoons pure vanilla extract
2 1/4 cups sugar
1 1/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3 cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F.
  • Butter and flour a 12 x 18 x 1-inch baking sheet.
  • Melt together the butter, 1 pound of chocolate chips, and the unsweetened chocolate in a medium bowl over simmering water. Allow to cool slightly. In a large bowl, stir (do not beat) together the eggs, coffee granules, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temperature.
  • In a medium bowl, sift together 1 cup of flour, the baking powder, and salt. Add to the cooled chocolate mixture. Toss the walnuts and 12 ounces of chocolate chips in a medium bowl with 1/4 cup of flour, then add them to the chocolate batter. Pour into the baking sheet.
  • Bake for 20 minutes, then rap the baking sheet against the oven shelf to force the air to escape from between the pan and the brownie dough. Bake for about 15 minutes, until a toothpick comes out clean. Do not overbake! Allow to cool thoroughly, refrigerate, and cut into 20 large squares.

BAREFOOT CONTESSA BROWNIE PUDDING

Barefoot Contessa Brownie Pudding image

This is so incredibly rich and decadent. From the Barefoot Contessa's cookbook "Back to Basics," I am posting it here so I don't lose it. The inside will appear VERY underbaked - it is supposed to be that way, so don't keep on baking it! The number of servings are as noted in the cookbook, though I think it could serve far more.

Time 1h10m

Yield 6 serving(s)

Number Of Ingredients 7

1 cup unsalted butter
4 extra large eggs
2 cups sugar
3/4 cup cocoa powder
1/2 cup all-purpose flour
1 tablespoon vanilla
1 tablespoon framboise liqueur (optional)

Steps:

  • Preheat oven to 325 degrees.
  • Melt butter and set aside to cool.
  • Beat eggs and sugar together on medium speed until very light yellow and thick, about 5 minutes.
  • Sift cocoa powder and flour together, and add to sugar and egg mixture on low speed just until mixed.
  • Slowly pour in melted butter and mix again just until combined.
  • Grease a 9x12x2 baking dish (I used an 8x11), and spread mixture into the pan.
  • Place dish into a larger baking pan.
  • Add enough very hot tap water to larger pan to come halfway up the side of the smaller pan.
  • Bake for exactly 1 hour.
  • A cake tester inserted 2 inches from the side will come out 3/4 clean.
  • The center will appear very underbaked, IT SHOULD. The texture of this is between a brownie and pudding.
  • Cool, serve slightly warm or room temperature, with vanilla ice cream if desired.

DOUBLE CHOCOLATE PUDDING

Double Chocolate Pudding image

Remember My-T-Fine chocolate pudding? It's the ultimate comfort food. Well, I like to take something familiar and bump up the flavor with high-quality ingredients. This pudding gets its flavor from good cocoa powder and imported semisweet chocolate. It's the real thing and, surprise!, it's not much harder to make than the packaged kind, and it's sooooo much better.

Time 55m

Yield 2 or 3 servings

Number Of Ingredients 10

6 extra-large egg yolks
1/2 cup sugar
1/4 cup cornstarch
3 tablespoons very good cocoa powder
Pinch salt
2 cups milk
1-ounce very good semisweet chocolate, chopped
2 tablespoons unsalted butter
1 1/2 teaspoons pure vanilla extract
2 tablespoons heavy cream

Steps:

  • Beat the egg yolks and sugar until light yellow and thick in the bowl of an electric mixer fitted with the paddle attachment, on medium-high speed. On low speed, add the cornstarch, cocoa powder, and salt. Bring the milk to a boil in a medium saucepan and, with the mixer on low, slowly pour the hot milk into the chocolate mixture. Combine well, then pour the mixture back into the pan.
  • Cook the mixture over low heat, stirring constantly with a whisk or wooden spoon, until thickened. If the mixture begins to curdle, remove it from the heat and beat it vigorously with a wire whisk. Remove the pan from the heat, add the chocolate, butter, vanilla, and heavy cream, and mix until the chocolate and butter are melted.
  • Pour into serving bowls. Place plastic wrap directly on the top of the pudding, and chill thoroughly.

Tips:

  • Choose high-quality chocolate. This will make a big difference in the flavor of your pudding. Look for chocolate with a cocoa content of at least 70%.
  • Use good quality cocoa powder. This will also help to give your pudding a rich, chocolatey flavor.
  • Don't overcook the pudding. If you cook it for too long, it will become tough and rubbery.
  • Serve the pudding warm or at room temperature. This will allow the flavors to meld together and develop.
  • Top the pudding with whipped cream, ice cream, or fresh berries. This will add a delicious finishing touch.

Conclusion:

Barefoot Contessa Brownie Pudding is a delicious and easy-to-make dessert that is perfect for any occasion. It is rich, chocolatey, and has a smooth and creamy texture. The pudding is also very versatile and can be served warm or at room temperature. It can also be topped with a variety of different ingredients, such as whipped cream, ice cream, or fresh berries. If you are looking for a delicious and easy-to-make dessert, Barefoot Contessa Brownie Pudding is the perfect choice.
