2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Place the chicken breasts on a sheet pan and rub with the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and shred the chicken in large bite-sized pieces. Blanch the asparagus in a pot of boiling salted water for 3 to 5 minutes until crisp-tender. Tips:

  • For the best results, use a combination of white and dark meat chicken for the salad. This will give the salad a more flavorful and moist texture.
  • If you're short on time, you can use a rotisserie chicken from the grocery store. Just be sure to remove the skin and bones before using.
  • Use a variety of vegetables for the salad. This will add color, flavor, and nutrients to the dish. Some good options include carrots, celery, cucumber, red cabbage, and green onions.
  • Don't be afraid to experiment with the dressing. You can use any type of dressing you like, but a simple vinaigrette or sesame dressing is a good option.
  • Serve the salad immediately or chill it for later. It's also delicious served over a bed of rice or noodles.
