BARB'S NOT SO TRADITIONAL EGG SALAD

Barb's Not so Traditional Egg Salad image

I am not crazy about eggs; I like them, but I have to mask them a bit. When I scramble eggs, I always add cheese. I was looking in my fridge one day; badly needing to go food shopping...trying to come up with something for lunch. I had eggs and I had mayonaise. I always have fresh herbs and spices, so I thought I could probably pull off an egg salad that was kicked up from the normal "yolky" tasting traditional egg salad. It worked well! I just made my egg salad last night; my son called me a work this afternoon to rave about how much he loves it!

4 large eggs
1 teaspoon Dijon mustard
1 tablespoon fresh lemon juice
1/4 avocado, diced
Coarse salt and ground pepper
2 ounces sliced smoked salmon (about 2 slices)
1/3 cup watercress, thick ends trimmed
2 slices whole-grain bread, toasted

Steps:

  • In a small pot, cover eggs with water by 1 inch and bring to a boil over high. Cover, remove from heat, and let sit 12 minutes. • In a medium bowl, whisk together mustard and lemon juice. Finely grate egg yolk into mustard mixture and whisk to combine. Stir in egg whites and avocado and season with salt and pepper. To serve, divide smoked salmon, egg salad, and watercress between toasts.

Tips:

  • Choose the right eggs: For the best flavor and texture, use large, fresh eggs.
  • Hard-boil the eggs perfectly: Place the eggs in a single layer in a saucepan and cover them with cold water. Bring the water to a boil, then cover the pan and remove it from the heat. Let the eggs stand in the hot water for 10-12 minutes, depending on how hard you want them to be.
  • Cool the eggs quickly: Immediately after boiling, transfer the eggs to a bowl of ice water to stop the cooking process. This will also make them easier to peel.
  • Chop the eggs finely: For a smooth and creamy egg salad, chop the eggs as finely as possible.
  • Add your favorite mix-ins: There are endless possibilities for mix-ins in egg salad. Some popular choices include celery, onion, pickles, pepper, herbs, and bacon.
  • Make it ahead of time: Egg salad can be made ahead of time and stored in the refrigerator for up to 3 days. This makes it a great option for picnics, potlucks, and other gatherings.

Conclusion:

Egg salad is a classic dish that is easy to make and can be enjoyed in many different ways. With its creamy texture and delicious flavor, egg salad is a perfect choice for a light lunch, a quick snack, or a side dish. So next time you're looking for a satisfying and versatile dish, give egg salad a try!
