1/4 cup barbecue sauce
2 cups sliced deli turkey breast or leftover turkey
6 slices crisp-cooked bacon
1 cup shredded Monterey Jack cheese (about 4 oz.)

Steps:

  • Arrange bread on baking sheet.
  • Combine Hellmann's® or Best Foods® Real Mayonnaise with barbecue sauce. Spread 1/2 of the mayonnaise mixture on bread. Toss turkey with remaining mixture. Arrange turkey on bread, then top with bacon and cheese.
  • Broil 1 minute or until cheese is melted.

2 tablespoons granulated garlic
2 tablespoons ground black pepper
2 tablespoons kosher salt
2 tablespoons sugar
1 tablespoon celery seed
1 gallon water
2 tablespoons kosher salt
2 tablespoons sugar
1 turkey breast (3 to 4 pounds)
1 tomato
1 red onion
1 dill pickle
1 head green leaf lettuce
4 hamburger buns
1/2 cup mayo

Steps:

  • For the lemon pepper: Zest the lemon and allow to dry. Mix with the granulated garlic, pepper, salt, sugar and celery seed.
  • For the brine: Add 4 cups of the water, salt, sugar and half of the lemon pepper to a saucepan. Bring this mixture to boil over high heat, and then add the remaining water.
  • For the turkey breast: When the brine is cool, add the turkey and refrigerate for 3 hours.
  • Sprinkle the turkey with the remaining lemon pepper and place in your backyard smoker for approximately 3 hours at 250 degrees F. Use mesquite wood if available. Oak will work as a substitute (if you don't have a smoker you can use your oven).
  • Slice the tomato, red onion, dill pickle and pull the leaves off the head of green leaf lettuce (don't forget to wash thoroughly).
  • Toast the buns and spread mayo on both sides. Slice the turkey breast thinly and place on the bottom bun. Place leaf lettuce, tomato slices, red onion slices and dill pickle slices (in that order) on the top bun and serve open faced.

1 recipe Basic Marinade
1 sweet onion, cut in 1/4-inch-thick rounds
5 plum tomatoes, cut in 1/4-inch rounds
2 25-inch baguettes, halved lengthwise
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
2 ounces Parmesan, sliced paper thin
1 cup fresh basil leaves
1 bunch watercress, tough stems discarded

Steps:

  • Remove tenderloin from turkey; cut tender in half lengthwise. Cut breast into 1/2-inch-thick medallions. Cut open two sides of a resealable plastic bag. Place 1 medallion in bag; pound to 1/4-inch thickness with a meat pounder. Transfer to a nonmetal container. Repeat with remaining turkey. Add marinade. Chill for 2 hours.
  • Heat a grill or grill pan. Brush onion, tomatoes, and bread with oil. Season onion and tomatoes with salt and pepper. Grill onion until browned and soft, about 2 minutes per side. 2 cloves garlic, peeled, sliced
1 tablespoon canola oil

2 loaves Cuban, French or Italian bread (15 inches long)
¼ cup honey mustard
½ pound smoked ham
½ pound sliced Swiss cheese
12 sandwich-style dill pickle slices

  • Spray cold grate of outdoor gas grill with cooking spray. Prepare grill for medium indirect heat.

  • Cut each bread loaf lengthwise in half. Then, cut each into 3 pieces (for 6 sandwiches). Spread the bottom half of each section with 2 teaspoons mustard. Top with the sliced turkey, ham, cheese and pickles. Cover with tops of bread loaves. Press sandwiches with hands to flatten. Tightly wrap individually in aluminum foil.
  • Place wrapped sandwiches on grill grate. Top each with heavy iron skillet or brick. Grill 3 to 5 minutes on each side, or until heated through.

1/2 cup water or 1/2 cup low sodium chicken broth
