Provided by Rachel Farnsworth

Number Of Ingredients 17

4 boneless skinless chicken breasts
1/3 cup rice vinegar
1/3 cup soy sauce
1 teaspoon sesame oil
2 tablespoons brown sugar
1/4 teaspoon red pepper flakes
1 teaspoon ground ginger
1 teaspoon crushed garlic
1/4 cup mayonnaise
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon curry powder
1/4 teaspoon salt
4 hamburger buns
4 slices pepper jack cheese
4 whole green chile peppers (from can, patted dry)
Lettuce

Steps:

  • Pound out each of the chicken breasts so that they are a fairly even thickness throughout. Marinate the chicken by combining the rice vinegar, soy sauce, sesame oil, brown sugar, red pepper flakes, ground ginger, and crushed garlic in a resealable plastic bag with the chicken breasts. Marinade for 30 minutes to an hour.
  • Preheat a gas grill to medium-high heat.
  • Make the sauce by combining the mayo, paprika, cayenne, curry powder, and salt in a bowl and mixing it up.
  • Grill the chicken for about 5-8 minutes each side. Actual time will depend on the thickness of your meat. The chicken is done when it is firm to the touch. Place the pepper jack slices on each piece of chicken during the last minute or so of cooking so it can melt.
  • Grill the buns face-side down for just a minute or two so that they are toasted. Spread the mayo mixture on the face of each bun. Top with cheese smothered chicken, green chili, and lettuce.

SANTA FE CHICKEN SANDWICH

This is a chicken sandwich that we like to grill in the summer. It is an attempt to have a homemade version of the Carl's Jr. sandwich. Sometimes we substitute pepper jack for the cheese. Sometimes we add tomato slices or red onion..have fun with it!

Time 23m

Yield 4 sandwiches, 4 serving(s)

Number Of Ingredients 11

1/4 cup mayonnaise
1/4 teaspoon paprika
1/4 teaspoon curry powder
1/4 teaspoon cayenne pepper

  • Marinade the chicken in the marinade in a shallow glas bowl or pan for 30 minutes to 1 hour.
  • Preheat your barbecue to a medium heat. Pound the chicken to an even 1/2 inch thickness. Grill the chicken for 5-8 minutes per side or until done.
  • In a small bowl, combine mayo, paprika, curry powder, cayenne pepper and salt.
  • Brown the cut side of the hamburger buns in a hot pan. I usually lightly butter them first.
  • Spread a tablespoon on the cut faces (top and bottom) bun. On the bottom, place a lettuce leaf. Cut open a chile and place it on top of the lettuce so that is covers most of the lettuce. Place the chicken on the chile then the slice of cheese, then the top bun.

Tips:

  • Use a flavorful marinade to infuse the chicken with bold flavors. The recipe suggests a marinade made with olive oil, lime juice, chili powder, cumin, garlic, and oregano.
  • Cook the chicken over medium-high heat to get a nice char on the outside while keeping the inside juicy.
  • To prevent the chicken from drying out, baste it with the marinade or a barbecue sauce during cooking.
  • Let the chicken rest for a few minutes before slicing and serving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful sandwich.
  • For a healthier version of the sandwich, use whole-wheat bread or a lettuce wrap instead of a white bun.

Conclusion:

This mouthwatering barbecue Santa Fe chicken sandwich is a perfect blend of smoky, spicy, and tangy flavors. The juicy chicken, flavorful marinade, and creamy avocado ranch dressing come together to create a sandwich that is sure to tantalize your taste buds. Whether you're enjoying it for lunch, dinner, or a backyard barbecue, this sandwich is sure to be a hit with everyone.
