BARBECUED BEEF BRISKET FOR A CHARCOAL GRILL

BARBECUED BEEF BRISKET FOR A CHARCOAL GRILL image

Categories     Beef

Yield 1 crowd

Number Of Ingredients 15

Spicy Chili Rub
4 tablespoons paprika
2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons dark brown sugar
2 tablespoons table salt
1 tablespoon ground oregano
1 tablespoon granulated sugar
1 tablespoon ground black pepper
1 tablespoon ground white pepper
2 teaspoons cayenne pepper
Brisket
1 whole beef brisket (point and flat cut together), 9 to 11 pounds, fat trimmed to 1/4-inch thickness
3 cups barbecue sauce (store-bought if preferred)
2 wood chunks (3-inch)

Steps:

  • 1. Rub: Mix all ingredients in small bowl. 2. Apply dry rub liberally to all sides of brisket; wrap tightly in plastic wrap. Refrigerate for at least 2 and up to 48 hours. 3. For Brisket: About 1 hour prior to cooking, remove the brisket from the refrigerator, unwrap, and let it come up to room temperature. Soak the wood chunks in cold water to cover for 1 hour and drain. 4. Meanwhile, light a large chimney starter filled a bit less than halfway with charcoal briquettes (2 1/2 quarts, or about 45 briquettes) and allow to burn. Put the cooking grate in place, open the grill lid vents completely, and cover, turning the lid so that the vents are opposite the wood chunks to draw smoke through the grill. Let the grate heat up for 5 minutes and then scrape the grate clean with a grill brush. 5. Position the brisket, fat side up, on the side of the grill opposite the fire. Barbecue, without removing the lid, for 2 hours. 6.Adjust an oven rack to the middle position and heat the oven to 300 degrees. Attach 2 pieces of heavy-duty foil, 4 feet long, by folding the long edges together 2 or 3 times, crimping tightly to seal well, to form an approximately 4 by 3 foot rectangle. Position the brisket lengthwise in the center of the foil crimping tightly to seal. Place the brisket on a rimmed baking sheet. Bake until the meat is fork-tender, 3 to 3 1/2 hours. 7. Remove the brisket from the oven, loosen the foil at one end to release steam, and let rest for 30 minutes.

OVEN BAKED BARBECUED BEEF BRISKET

Oven Baked Barbecued Beef Brisket image

This easy oven baked brisket recipe is perfect for those days when grilling or smoking outside is not an option. This tender yet flavorful brisket requires only 15 minutes of hands on prep work.

Provided by Beth Pierce

Categories     Beef

Time 3h45m

Number Of Ingredients 11

1 1/2 Tbsp packed light brown sugar
1 1/2 Tbsp paprika
1 Tbsp cumin
1/2 tsp ground black pepper
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
4 lb beef brisket, trimmed
2 large onions thick sliced
3/4 c beer (not flavored)
1 c barbecue sauce (your favorite)

Steps:

  • 1. In small bowl mix together brown sugar, paprika, cumin, black pepper, salt, onion powder and garlic powder. Rub all over the brisket on both sides and let sit for 30 minutes.
  • 2. Preheat oven to 300 degrees. Place brisket in large roasting pan (with fat side down) and cover with sliced onions. Pour beer and barbecue sauce over the top. Cover well with aluminum foil and bake for 3 1/2 - 4 hours. You can check to see if the brisket is done by slicing off a small piece of the edge and seeing if it comes apart with a gentle tug. Remove from pan and trim any excess fat away. Brush with any extra sauce and place under broiler or on grill for 1-2 minutes. Flip and repeat for the other side. Stay close by as broilers are unpredictable.
  • 3. Cover and let rest for 20-30 minutes. Slice against the grain at a perpendicular angle. If desired serve with extra barbecue sauce.

3-Day Barbecued Marinated Beef Brisket image

Yes, this takes three days to make, but it is well worth it. It is actually not cooked on a barbecue grill, although I suppose you could do that also. But it tastes like real slow-cooked barbecue! The preparation time listed is just the total of the three steps, and does not include full days.

BARBECUED BEEF BRISKET RECIPE RECIPE - (4.3/5)

Barbecued Beef Brisket Recipe Recipe - (4.3/5) image

Provided by á-10360

Number Of Ingredients 12

BRISKET:
1/2 cup brown sugar, packed
1/2 cup ketchup
1/4 cup water
1/4 cup cider vinegar
1/4 cup canola oil
3 tablespoons dark corn syrup
2 tablespoons prepared mustard
1 tablespoon prepared horseradish
1 garlic clove, minced
2 tablespoons canola oil
1 (2 to 2.5-pounds) fresh beef brisket, trimmed

Steps:

  • In a small saucepan, combine brown sugar, ketchup, water, cider vinegar, 1/4 cup of canola oil, dark corn syrup, mustard, horseradish, and garlic; cook and stir over medium heat for 3 to 4 minutes or until brown sugar is dissolved. Transfer to a disposable foil pan. In a large skillet, heat oil over medium heat. Brown brisket on both sides. Place in foil pan, turning to coat with sauce. Cover pan tightly with foil. Place pan on grill rack over indirect medium heat. Grill, covered, 2 to 2 1/4 hours or until meat is tender. Remove from heat. Remove brisket from pan; tent with foil and let stand 10 minutes. Meanwhile, skim fat from sauce in pan. Cut brisket diagonally across the grain into thin slices; serve with sauce.

Tips:

  • Choose the right cut of beef brisket: Look for a brisket that is well-marbled with fat, as this will help keep the meat moist during cooking. For optimal results, select a brisket that weighs between 12 and 15 pounds.
  • Prepare the brisket properly: Before cooking, trim excess fat from the brisket, leaving a layer of about 1/4 inch. Score the brisket's fat cap to help the marinade penetrate deep into the meat. Create a flavorful marinade using a combination of dry rubs and wet ingredients like oil, vinegar, or beer. Allow the brisket to marinate for at least 8 hours, or preferably overnight, to maximize flavor absorption.
  • Smoke the brisket at the right temperature: For the best results, aim for a smoker temperature between 225°F and 250°F. This low and slow cooking method allows the brisket to cook evenly and develop a rich smoky flavor.
  • Monitor the internal temperature: To ensure the brisket is cooked to perfection, use a meat thermometer to monitor its internal temperature. The brisket is ready when it reaches an internal temperature of 200°F to 205°F for sliced brisket and 195°F to 200°F for pulled brisket.
  • Let the brisket rest before serving: Once the brisket is cooked, remove it from the smoker and let it rest for at least 30 minutes before slicing. This allows the juices to redistribute throughout the meat, resulting in a tender and succulent brisket.

Conclusion:

By following these tips and considering the variations and recommendations provided in the article, you can create a mouthwatering barbecued beef brisket that will impress your taste buds and become a favorite dish among your family and friends.
