Provided by Patrick and Gina Neely : Food Network

Time 1h25m

Yield 6 servings

Number Of Ingredients 14

2 tablespoons olive oil
8 ounces mushrooms, finely chopped
1 large Vidalia onion, chopped
2 cloves garlic, chopped
Pinch red pepper flakes
1/4 cup chicken stock
1 tablespoon Worcestershire sauce
1 egg, lightly beaten
1/2 cup panko (Japanese) breadcrumbs
6 ounces crumbled blue cheese
2 pounds ground turkey
1 (8-ounce) can tomato sauce
1 shallot, sliced
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat olive oil in a large saute pan over medium-high heat. Add mushrooms, onions, and garlic. Saute until mushrooms are browned, about 5 to 6 minutes.
  • Stir in red pepper flakes and saute for 1 more minute. Add chicken stock and Worcestershire sauce, remove from heat and allow to cool.
  • In a large bowl, combine egg, panko, blue cheese, and mushroom mixture. Fold in turkey and combine. Don't over work or the meatloaf will be tough.
  • Shape into a long rectangular loaf directly on a sheet tray. Spoon tomato sauce on top of the loaf and shingle sliced shallots down the top. Bake for 1 hour and 10 minutes, and serve.

Tips:

  • Choose the right ground turkey: Look for ground turkey that is at least 85% lean. This will help to ensure that the meatloaf is not too dry.
  • Use a variety of seasonings: Don't be afraid to experiment with different seasonings to find a combination that you like. Some good options include garlic powder, onion powder, paprika, and cumin.
  • Don't overmix the meatloaf: Overmixing the meatloaf can make it tough. Mix the ingredients just until they are combined.
  • Cook the meatloaf at a low temperature: This will help to prevent the meatloaf from drying out. Cook the meatloaf at 325 degrees Fahrenheit for about 1 hour and 15 minutes, or until a meat thermometer inserted into the center reads 165 degrees Fahrenheit.
  • Let the meatloaf rest before slicing: This will help the meatloaf to hold its shape and make it easier to slice.

Conclusion:

Barbecue turkey meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. With its smoky flavor and moist texture, this meatloaf is sure to be a hit with everyone at your table. So next time you're looking for a new way to cook turkey, give this recipe a try.
