3 pounds boneless skinless chicken thighs
3 tablespoons olive oil, divided
1/2 cup ketchup
1/2 cup Sriracha chili sauce
1/2 cup plus 2 tablespoons honey, divided
1/2 cup water
3 tablespoons lime juice
2 teaspoons grated lime zest
2 teaspoons minced garlic
1 teaspoon ground ginger
1/4 teaspoon pepper
12 mini pretzel buns, split
12 slices part-skim mozzarella cheese, halved
1/4 to 1/2 teaspoon crushed red pepper flakes
Coarse salt, optional
SRIRACHA-LIME DIPPING SAUCE:
1 cup reduced-fat mayonnaise
2 tablespoons Sriracha chili sauce
2 tablespoons lime juice
2 teaspoons grated lime zest
2 green onions, chopped

Steps:

  • In a Dutch oven over medium heat, brown chicken in 1 Tbsp. olive oil, about 5 minutes., Meanwhile, stir together ketchup, chili sauce, 1/2 cup honey, water, lime juice and zest, garlic, ginger and pepper. Pour over browned chicken and bring to a boil. Reduce heat to low and cook, covered, stirring occasionally, until chicken is tender, 25-30 minutes. Remove chicken and bring sauce back to a simmer; cook until thick, about 5 minutes. Shred chicken with 2 forks; toss with reduced sauce. , Preheat oven to 375°. Place bottom buns in a greased 13x9-in. baking dish. Place half a slice of cheese on each of the buns; spoon chicken mixture on top of cheese. Top with remaining cheese slices and bun tops. ⅓ cup milk
1 egg
1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
¼ cup potato starch
¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon shichimi togarashi (Japanese red pepper condiment)
oil for frying
¼ cup mayonnaise
2 tablespoons honey
2 tablespoons sweet chili sauce
1 teaspoon gochujang (Korean hot pepper paste)

Steps:

  • Whisk together milk and egg in a bowl until smooth. Add chicken to egg wash and marinate for 15 minutes. Drain.
  • Combine potato starch, flour, salt, pepper, and ground red pepper in a bowl and transfer into a large resealable bag. Add egg-washed chicken pieces and shake until each piece is completely dredged.
  • Heat oil in a large skillet to 325 degrees F (165 degrees C).

For the marinade
■3/4 cup ponzu sauce
■1/4 cup soy sauce
■juice of 1 lime
■1 teaspoon ground ginger

For the wing sauce
■1/2 cup mayonnaise
■1/2 cup sweet Thai chili sauce
■juice of 1/2 lemon
■2 tablespoons sriracha sauce

Steps:

  • Combine all the marinade ingredients and add to a large Ziploc® freezer bag along with the chicken wings and marinate in the refrigerator for at least a couple of hours or preferably overnight.
