This recipe is from the 1973 Pillsbury Bake-off contest and is my favorite version of banana bread. I usually make a powdered sugar glaze for the top, which makes it extra special.

1 1/4 cups all-purpose white flour
1/2 cup whole wheat flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups mashed ripe bananas (3 medium)
1/4 cup margarine or 1/4 cup butter, softened
2 tablespoons orange juice
1/4 teaspoon lemon juice, if desired
1 egg
1/2 cup raisins

Steps:

  • Heat oven to 350.
  • Grease and flour bottom only of 9X5 or 8X4 inch loaf pan.
  • In large bowl, combine all ingredients except raisins; beat 3 minutes at medium speed.
  • Fold in raisins.
  • Pour batter into greased and floured pan.
  • Bake at 350 for 55 to 65 minutes or until toothpick inserted in center comes out clean.
  • Cool 10 minutes; remove from pan.
  • Cool on wire rack.
  • Wrap tightly and store in refrigerator.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Mash banana in a large bowl. Whisk in eggs, sugar, honey, oil, and vanilla extract.
  • Combine whole wheat flour, all-purpose flour, cinnamon, baking soda, baking powder, and salt in a separate bowl. Stir into the banana mixture until batter is moistened.

1/4 cup honey
1 large egg, room temperature, lightly beaten
4-1/2 teaspoons canola oil
1/2 teaspoon vanilla extract
1 medium ripe banana, sliced
2 teaspoons poppy seeds
1 teaspoon salt
1-3/4 cups bread flour
1-1/2 cups whole wheat flour
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). 1 teaspoon vanilla extract
2 eggs
