Hangover Berry, Banana, Chocolate-Hazelnut Waffle Sandwich image

Waffles don't have to just be covered in syrup or whipped cream; they also make a great bun for a sandwich. To take it over the top, add a schmear of almond or peanut butter.

BANANA NUT WAFFLE COOKIES

Banana Nut Waffle Cookies image

Inspired by Kellie Shulver's Chocolate Turtles Waffle Cookies, these are a great way to use up dark bananas and much faster than banana bread. They are slightly crisp on the outside and moist on the inside. Even better, they only take about ten minutes!

Time 15m

Number Of Ingredients 9

1/2 c butter, melted
1 c brown sugar, firmly packed
2 eggs, beaten
1 tsp vanilla
1 c banana, mashed
1/2 c chopped nuts ( i used walnuts)
1 3/4 c flour
1 tsp baking powder
1/4 tsp salt

Steps:

  • 1. Melt butter in a medium mixing bowl. Set aside.
  • 2. Pre heat waffle iron.
  • 3. In another bowl sift together flour, baking powder, and salt.
  • 4. Add eggs, vanilla, and bananas to melted butter. Mix well. Add brown sugar and mix.
  • 5. Add in flour mixture and nuts, stirring to combine well. Mixture should be about the consistency of cookie dough. Add a tablespoon or two more flour, if necessary.
  • 6. Drop tablespoons of dough onto hot waffle iron, one tablespoon on each square. Bake until it stops steaming, about 2 minutes.
  • 7. Cool and dust with powdered sugar. A cream cheese icing would also be yummy.

Tips:

  • Use ripe bananas: Ripeness of bananas is directly linked to your waffles' flavor and texture. Overripe bananas will have more sugar which results in crispier edges and a softer center.
  • Don't overmix the batter: Overmixing will make your waffles tough and dense. Mix just until the ingredients are combined.
  • Let the batter rest: Letting the batter rest for a few minutes before cooking will allow the gluten to relax, which will also result in lighter and fluffier waffles.
  • Preheat your waffle iron: This is essential for evenly cooked waffles. Make sure your waffle iron is preheated to the desired temperature before you start cooking.
  • Don't overcrowd the waffle iron: Cooking too much batter at once will result in undercooked waffles. Use just enough batter to cover the waffle iron's cooking surface.
  • Cook the waffles until they are golden brown: This is the best way to ensure that they are cooked through. Check the manufacturer's instructions for the recommended cooking time.
  • Serve the waffles immediately: Waffles are best served hot and fresh. If you're not serving them right away, keep them warm in a preheated oven.

Conclusion:

Banana waffles are a delicious and versatile breakfast or brunch option. They can be served with a variety of toppings, such as butter, syrup, fruit, or whipped cream. With a few simple tips, you can make perfect banana waffles every time.
