2 large eggs, separated
2/3 cup shortening
1-1/2 cups sugar
1 cup mashed ripe bananas (2 to 3 medium)
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 cup buttermilk
1/2 teaspoon vanilla extract
1/2 cup chopped walnuts, optional
Whipped cream and sliced bananas, optional

Steps:

  • In a small bowl, beat egg whites until soft peaks form; set aside. In a large bowl, cream shortening and sugar. Beat in egg yolks; mix well. Add bananas. Combine flour and baking soda; add to creamed mixture alternately with buttermilk, beating well after each addition. Add vanilla. Fold in egg whites. 1 cup brown sugar, packed
1 (10 ounce) jar apricot preserves
2 eggs, beaten
1 teaspoon vanilla
1 3/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda

1 cup mashed ripe banana
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Cream the margarine and brown sugar.

1 (18 ounce) box yellow cake mix
1/2 cup butter, softened
2 eggs
1 1/2 cups chopped nuts (or to taste)
3 1/2 cups mini marshmallows (6 1/2 ounces)
1 (3 ounce) box vanilla instant pudding mix
2 large ripe mashed bananas

Steps:

  • Set oven to 350 degrees.
  • Grease a 11 x 7-inch baking pan.
  • In a large bowl, combine cake mix, butter, eggs; beat until combined (about 2 minutes).
  • Add/mix in nuts.
  • Press half of the cake mixture into bottom of prepared baking pan with hands or back of a slightly wet spoon (the mixture will be thick and fairly sticky, so the best way is to keep your hands slightly wet); reserve the remaining mixture for topping.
  • To make filling: in a double boiler or microwave, melt the marshmallows, stirring constantly until smooth.
  • Add in the dry pudding mix and mashed bananas to the melted marshmallows; mix to combine.
  • Spread/pour evenly over the cake batter in the pan.
  • Crumble remaining cake batter over filling with wet hands (doesn't have to cover completely).

9 strawberries
1 ounce semisweet chocolate

Steps:

  • Preheat oven to 350°. Prepare brownie mix according to package directions; stir in 1/2 cup of peanuts. Pour into 9" square baking pan. Bake according to package directions. Cool completely.
  • Slice 2 of the bananas; place in single layer over brownie.

35 Nilla wafers, crushed
1/4 c margarine, melted (1/2 stick)
1 pkg Philadelphia cream cheese, softened (8 oz.)
1/2 c powdered sugar
1 pkg Cool Whip, thawed, divided (16 oz)
3 bananas
3 c milk, cold
2 pkg Jell-o vanilla flavor instant pudding (4-serving size each)
1/2 square of Baker's semi-sweet baking chocolate, grated

Steps:

  • 1. Combine wafer crumbs and margarine.
  • 2. Press firmly onto the bottom of the 9×13-inch dish. Refrigerate while preparing the filling. **If you want a thicker crust, double the crust ingredients to get it to easily cover the bottom of a 9X13 pan.
  • 3. Mix cream cheese and sugar in a medium bowl until well blended.
  • 4. Stir in 1-1/2 cups of the whipped topping. Spread carefully onto crust. Set aside.
  • 5. Pour milk into a large bowl.
  • 6. Add dry pudding mixes. Beat with wire whisk 2 min.
  • 7. Slice bananas and arrange over cream cheese mixture.
  • 8. Spoon pudding over bananas.

3/4 c peanuts, dry roasted, chopped and divided
1 pkg (15 oz.) brownie mix of your choice
3 medium bananas
1 1/4 c cold milk
1 pkg (5.1 oz.) instant vanilla pudding mix
1 pkg (8 oz.) frozen whipped topping, thawed and divided
9 large whole strawberries
1 oz unsweetened baking chocolate

Steps:

  • 1. Prepare brownie mix according to package directions. Stir in 1/2 cup chopped peanuts. Pour into a buttered 9" square baking pan. Bake in a preheated 350-degree oven for 24-27 minutes. Cool completely.
  • 2. Slice 2 of the bananas and layer over the brownies. In a large mixing bowl, whisk pudding mix into the milk; beat until mixture just begins to thicken. Fold in 2-1/2 cups of the whipped topping. Quickly spread pudding mixture over the sliced bananas. Refrigerate for 30 minutes. Sprinkle remaining 1/4 cup peanuts over pudding mixture.

1 pkg sugar cookie mix (1lb 1.5 oz)
1 egg, slightly beaten
1 pkg cream cheese
1 can(s) sweetened condensed milk, 14 oz
1 tub, frozen whipped topping
1 box instant banana pudding
3 medium ripe bananas, sliced

Steps:

  • 1. Preheat oven to 375. Spray a 13x9 baking dish with cooking spray.
  • 2. In a medium bowl cut butter into cookie mix until mixture is crumbly. Reserve 3/4 cup of mixture for topping. Mix egg in remaining cookie mixture until incorporated. Press crumbs evenly in bottom of baking dish. Bake 13 to 15 minutes or until light golden brown around the edges. Cool completely.
  • 3. On a cookie sheet place the reserved topping crumbs in a thin layer. Bake 8 minutes stirring occasionally or until light golden brown. Crumble into small pieces.
  • 4. In a large mixing bowl beat cream cheese with electric mixer until smooth, add sweetened condensed milk, beat until well blended. Beat in the whipped topping until smooth. Add the pudding mix and continue to beat for an additional 2 minutes or until everthing is combined and fluffy.
  • 5. Spread 1/3 of pudding mixture onto the cooled cookie base. arrange bananas in a single layer of pudding mix. Top with remaining pudding mixture and refrigerate for 10 minutes or until set. Sprinkle the reserved cookie crumbs over the pudding.

  • Heat oven to 375°F. Spray 13x9-inch baking dish with cooking spray. In medium bowl, cut butter into cookie mix using pastry blender or fork, until mixture is crumbly. 1/2 c butter, softened
1 1/2 c sugar
2 eggs, room temperature
1 c sour cream
1 tsp vanilla extract
2 c cake flour
1 tsp baking soda
1/4 tsp salt
2 medium ripe bananas, mashed (about 1 cup)
CREAM CHEESE FROSTING
8 oz cream cheese, room temperature
1/2 c butter, softened
2 tsp vanilla extract
3 3/4 - 4 c powdered sugar

Steps:

  • 1. In a bowl, cream butter and sugar. Add the eggs, sour cream and vanilla one at a time. Combine the flour, baking soda and salt; gradually add to the creamed mixture. Stir in bananas.
  • 2. Spread into a parchment lined 13 x 10 x 1 inch baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool.
