Time 25m

Number Of Ingredients 2

2 Ripe Bananas (with spots)
1 1/3 C. Unsweetened Shredded Coconut

Steps:

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or silicon liner.
  • Add bananas to a bowl and mash with a fork until smooth (no lumps). One of my tricks to getting things extra creamy and smooth is to use a handheld immersion blender (see recipe video).
  • Once banana is mashed and smooth, add the shredded coconut. Mix with a fork then use your hands to make sure the coconut is fully incorporated into the banana. **Add a pinch of sea salt (optional).
  • Separate mixture into 8 equal parts. Roll the mixture into a tight ball then flatten into a cookie shape (about 1/2 inch thick) and place onto the baking sheet. Repeat this process until you've formed 8 cookies.
  • Bake cookies for 20-25 minutes or until tops are golden. **It took mine exactly 22 minutes. Once done, transfer cookies to a cooling rack and let cool completely before serving. ENJOY!!

Tips:

  • To ensure the cookies have a soft and chewy texture, make sure not to overmix the dough. Overmixing can result in tough cookies.
  • For a richer, more intense coconut flavor, toast the coconut flakes before using them. To do this, spread the coconut flakes in a single layer on a baking sheet and bake at 350°F for 5-7 minutes, or until lightly golden brown, stirring occasionally.
  • For a chewier cookie, chill the dough for at least 30 minutes before baking. This will allow the flavors to meld and develop, and will also help prevent the cookies from spreading too much in the oven.
  • To prevent the cookies from sticking to the baking sheet, line the sheet with parchment paper or a silicone baking mat.
  • Bake the cookies until the edges are just beginning to brown and the centers are set. Overbaking will result in dry, crumbly cookies.

Conclusion:

These banana rum coconut cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their soft and chewy texture, rich coconut flavor, and hint of rum, they are sure to be a hit with everyone who tries them. So next time you are looking for a sweet and satisfying snack, give these cookies a try. You won't be disappointed!
