1/4 cup honey
1 large egg, room temperature, lightly beaten
4-1/2 teaspoons canola oil
1/2 teaspoon vanilla extract
1 medium ripe banana, sliced
2 teaspoons poppy seeds
1 teaspoon salt
1-3/4 cups bread flour
1-1/2 cups whole wheat flour
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). ⅓ cup vegetable oil
½ cup honey
1 teaspoon vanilla extract
2 eggs
1 cup mashed bananas
1 ¾ cups whole wheat flour
½ teaspoon salt
1 teaspoon baking soda
¼ cup hot water
½ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan.
  • In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Spread batter into prepared pan.
  • Bake until a toothpick inserted in the center of the loaf comes out clean, 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.

2/3 cup plain nonfat yogurt
1/2 cup fat-free cholesterol-free egg product or 2 eggs
1/3 cup vegetable oil
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Move oven rack to lowest position. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches.

Anyway, this "monkey bread" as my kids call it , has flax seed powder instead of eggs, applesauce instead of oil. If you don't like the Splenda Brown Sugar Blend, use 1 1/4 cup of brown sugar.
