Time 25m

Yield 9 serving(s)

Number Of Ingredients 12

2 ripe bananas
1/4 cup dark brown sugar
1/4 cup canola oil
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup whole wheat flour
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2/3 cup pumpkin butter
rolled oats
cinnamon

Steps:

  • Preheat you oven to 350 degrees and either line a muffin tin with papers or coat it with cooking spray.
  • Mash your bananas thoroughly and add in the sugar and oil, stirring to combine. Toss in the cinnamon, salt, both flours, baking powder and soda all at once, and mix just enough to moisten all of the dry ingredients, but there's no need to be too thorough. Finally, add in the pumpkin butter and stir that well, being careful not to over-mix. The resulting batter should be rather thick.
  • Spoon the batter into your prepared tins, mounding it up generously in the centers. Sprinkle oats and cinnamon on top as desired, and bake for 15 - 25 minutes until golden brown, and a tooth pick inserted into the middle comes out clean. Let cool on a wire rack and enjoy.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your muffins will be.
  • Don't overmix the batter: Overmixing can result in tough muffins. Stir just until the ingredients are combined.
  • Use muffin liners: Muffin liners make it easy to remove the muffins from the pan and keep them from sticking.
  • Fill the muffin cups evenly: This will ensure that all of the muffins bake evenly.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This is the best way to tell if the muffins are done baking.
  • Let the muffins cool before serving: This will allow the flavors to meld together and the muffins to set.

Conclusion:

These banana pumpkin spice muffins are a delicious and easy-to-make fall treat. With their moist texture, sweet banana flavor, and warm pumpkin spice aroma, they're sure to be a hit with everyone who tries them. So next time you're looking for a seasonal snack or breakfast, give these muffins a try. You won't be disappointed!
