2 cups crushed graham crackers
½ cup margarine, melted
½ cup margarine
2 cups confectioners' sugar
2 eggs
4 tablespoons cornstarch
1 tablespoon vanilla extract
3 bananas
¼ cup lemon juice
1 (20 ounce) can crushed pineapple in heavy syrup, drained
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Combine graham cracker crumbs and melted margarine, and pat into bottom of 9x13-inch pan.
  • In medium, non-stick saucepan over medium heat, combine remaining margarine, confectioners' sugar, eggs, corn starch and vanilla. Bring to a boil, stirring frequently. Continue stirring, reduce heat and simmer 8 to 10 minutes. Let cool, then spread over crust.
  • Peel and slice bananas, dipping each piece in lemon juice to prevent browning, and layer over custard mixture. Layer pineapple on top of bananas. Cover all with whipped topping. Keep refrigerated until serving.

Made this frozen punch for Mothers day would be great for those summer BBQs. This can be made days before and placed in a punch bowl, which makes it easy for cooking and serving a family get together.

15 ounces of cream coconut milk
20 ounces pineapple chunks
46 ounces pineapple juice
10 ounces frozen limeade concentrate
2 liters carbonated lemon-lime beverage
8 ounces grenadine
1 liter cruzan banana rum
1 liter seltzer water (optional)

Steps:

  • Place milk and pineapple chunks in blender and blend to mix the milk into the pineapples. This will have a slight chunky texture.
  • Place in a very large bowl or pot with all the rest of the ingredients except for the optional seltzer.
  • Mix and pour into 3 gallon freezer ziplock storage bags. Freeze overnight.
  • Place into a punch bowl the icy mixture. You can add the optional seltzer if it`s to strong or to sweet for you. I kept it on the side for my guests to have an option to add if they want.

1/2 cup butter
2 cups graham cracker crumbs
1 cup butter
2 cups icing sugar
2 eggs
4 sliced bananas
1 cup crushed pineapple, drained
500 ml whipping cream

Steps:

  • Mix together the butter and the graham crumbs, pack down in a 9x13 pan.
  • Bake at 375 for e minutes.
  • Cool Mix together 1 cup of butter, icing sugar, and eggs to make the second layer.
  • Beat 5 minutes and pour over cooled crust.
  • Spread evenly.
  • Whip cream as you normally would (add vanilla and sugar) and set aside.
  • Slice the bananas and arrange on the second layer.
  • Pour drained pineapple on and spread evenly.
  • Top with whipped cream.
  • Refridgerate for at least 2 hours.
