Tips:
- Select ripe bananas: Use ripe, spotty bananas for the best flavor and sweetness in your muffins.
- Cream butter and sugar thoroughly: This step helps incorporate air into the batter, resulting in light and fluffy muffins.
- Add eggs one at a time: Gradually adding the eggs helps prevent the batter from curdling.
- Use fresh orange zest: Freshly grated orange zest provides a vibrant citrus flavor to the muffins.
- Do not overmix the batter: Overmixing can result in tough muffins. Mix just until the ingredients are combined.
- Fill muffin cups evenly: Divide the batter evenly among the muffin cups to ensure uniform baking.
- Bake until a toothpick inserted into the center comes out clean: This indicates that the muffins are done baking.
- Allow muffins to cool before frosting: Let the muffins cool completely before frosting to prevent the frosting from melting.
