BANANA BREAD BAKED OATMEAL BARS

Banana Bread Baked Oatmeal Bars image

This is the perfect breakfast for those days when you really want a muffin but need something hearty and healthy like oatmeal. For the best flavor use a very ripe banana. Any fruit can be substituted for the banana, including dried fruit (cranberries!) and nuts. The bars are great the next day, too. Once cool, put the bars into the fridge, then pop them in the microwave for a few seconds before eating.

A quick and delicious breakfast bar. I make these for my daughter and husband to get them fed and out the door quick in the morning. I have made these with a variety of combinations of dried fruits. You can also try diced carrots or parsnips in place of the cranberries for a nice change. Its an easy way to sneak veggies into a kid's diet!

Tips for Making the Best Banana Oat Breakfast Bars

  • Use ripe bananas for the best flavor and texture. Overripe bananas are ideal, as they are sweeter and have a more intense flavor.
  • Mash the bananas well to ensure they are evenly distributed throughout the bars. This will help prevent dry spots and ensure a smooth, consistent texture.
  • Use a combination of rolled oats and quick oats for the best results. Rolled oats will give the bars a chewy texture, while quick oats will help them bind together.
  • Add your favorite mix-ins, such as nuts, seeds, dried fruit, or chocolate chips. This will give the bars a delicious flavor and texture boost.
  • Bake the bars until they are just set in the center. Overbaking will make them dry and crumbly.
  • Let the bars cool completely before cutting them into squares. This will help prevent them from falling apart.

Conclusion

Banana oat breakfast bars are a delicious and nutritious grab-and-go breakfast option. They are easy to make and can be customized to your liking. With their wholesome ingredients and delicious flavor, these bars are a great way to start your day.
