This is my most requested cake for birthdays in our family.It came from an old Betty Crocker dessert cookbook published in 1977. (if you use the banana slices before to put a little lemon juice on them so they don't turn brown)

Number Of Ingredients 14

2 cups all-purpose flour
1 2/3 cups sugar
1 1/4 teaspoons baking soda
1 teaspoon salt
3/4 teaspoon baking powder
2/3 cup shortening
2/3 cup buttermilk
3 eggs
2 cups mashed ripe bananas (about 3 medium)
1 banana, sliced (to garnish)
2/3 cup finely chopped pecans or 2/3 cup nuts, of choice
1 cup heavy cream
3 tablespoons granulated sugar or 3 tablespoons confectioners' sugar
1 teaspoon vanilla

Steps:

  • Heat oven to 350*.
  • Grease and flour oblong pan, 9x13x2 inches, or three 8-inch or two 9-inch round layer pans.
  • Measure all ingredients except frosting into large mixing bowl.
  • Blend 1/2 on low speed, scaping bowl constantly.
  • Beat 3 minutes on high speed scraping bowl occasionally.
  • Pour batter into pan (s).
  • Bake until toothpick inserted in center comes out clean, oblong 45 to 50 minutes, layers 35 to 40 minutes.
  • Cool.
  • Before serving frost cake with whip cream frosting, and garnish with banana slices.
  • WHIP CREAM FROSTING: In a chilled bowl beat 1 cup chilled whipping cream and 3 tsps.
  • sugar.
  • Fold in 1 tsp vanilla.
  • Yields 2 cups.

1/2 c butter
1 1/2 c sugar
3 egg yolks
1 c mashed bananas
1/4 c boiling water
1/2 c chopped pecans
1 tsp lemon juice
2 c flour
1 tsp baking powder
1 tsp baking soda, dissolved in 1/4 cup buttermilk
3 egg whites
1/4 tsp salt
BANANA FILLING & FROSTING
1/2 c butter, softened
1 box confectioners sugar
1/2 c mashed bananas
1/2 c chopped pecans
1 Tbsp lemon juice

Steps:

  • 1. Cream butter and sugar, add egg yolks and mashed bananas. In separate bowl, pour boiling water over pecans and set aside. Add lemon juice to banana mixture. Sift flour and baking powder together and add to batter alternately with butter milk and soda mixture. Add pecans.
  • 2. Beat egg whites with salt until stiff peaks form. Fold in egg whites.
  • 3. Bake in two 9 inch layer cake pans at 300 for 35, until golden brown and done in center. Remove from oven and cool completely before spreading with fill/frosting.
  • 4. Filling/Frosting-Mix butter and sugar until creamy. Add bananas, nuts and juice( may need additional confectioners sugar if you like thicker frosting). Spread between layers and on sides and top of cake.

1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cardamom
1/2 c light brown sugar
1/4 tsp salt
1/2 stick butter, softened
3 ripe bananas mushed,
1/2 c applesauce, not sweetened
1/2 tsp vanilla
1/8 tsp banana extract
1 egg
1/4 - 1/2 c chopped walnuts or pecans
butter cream frosting or banana glaze
butterscotch chips

Steps:

  • 1. Spray muffin tin with non stick cooking spray. Set oven top 350 degrees
  • 2. Mix flour, baking soda, cardamom, cinnamon, nutmeg, and salt in a bowl
  • 3. In a seperate bowl beat sugar and butter until mixed well. Add applesauce, bananas, extracts and egg and beat again until mixed well.
  • 4. Now add flour mixture to sugar and banana mixture about a third at a time, beating after each third until all flour mixture is added.
  • 5. Into this fold the walnuts or pecans.
  • 6. Using a small ladle, put muffin mix into tins filling about 2/3 of the way.
  • 7. Bake for about 25 to 30 minutes or until toothpick inserted in muffin comes out clean. Remove from oven and let cool completely if adding frosting or glaze. Otherwise serve warm from the oven.
  • 8. For Buttercream Frosting: Put frosting in a pastry bag, add the tip of choice and squeeze onto muffins in desired thickness. Top off with a butterscotch morsel
  • 9. For banana glaze: add powdered sugar, banana extract, and milk together to desired consistancy (add extract to your taste) Dip cooled muffin tops into glaze and let excess drain off while upside down.

  • 3. POR BATTER INTO 2 8 INCH BUTTERED AND FLOURED SQUARE CAKE PANS. BAKE AT 350 FOR 25-30 MINUTES OR CAKE TESTER SAYS DONE. COOL ON WIRE RACKS 10 MINUTES, REMOVE FROM PANS AND COOL COMPLETELY.
  • 4. FOR FROSTING: IN SAUCEPAN, COMBINE BROWN SUGAR, BUTTER, SALT AND MILK, BRING TO A BOIL OVER MEDIUM HEAT. BOIL 5 MINUTES STIRRING FREQUENTLY. REMOVE FROM HEAT AND LET STAND 10 MINUTES.
