A recipe (originally by Ann Tremont) my mother put in a cookbook that I have modified quite a bit. Every time I bring this to work, everyone wants a piece (and there's not enough to go around).

Number Of Ingredients 10

2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup sugar
2/3 cup diced walnuts
2/3 cup mini chocolate chip
1 teaspoon vanilla extract
3 large ripened bananas
1/2 cup butter
2 whole eggs

Steps:

  • Hand mix flour, baking powder, baking soda, sugar, walnuts, chocolate chips, and vanilla extract in mixing bowl until chocolate chips and walnuts are evenly spread out throughout mixture.
  • In another bowl, mash bananas and add to the main mixing bowl.
  • Soften the butter (I microwave for 20 seconds) and add to the main mixing bowl.
  • Add two whole eggs to main mixing bowl.
  • Mix all ingredients together by hand until it has a batter-like consistency.
  • Pour into greased loaf pan.
  • Let mixture set for at least 20 minutes before baking (Preheat the oven to 325°F).
  • Bake at 325°F for 65 minutes (may take longer depending on the oven and altitude).
  • When finished baking, it is best to let it set overnight before serving.

1/3 c raisins
3 Tbsp rum
1-1/2 c flour
1/2 tsp baking soda
1/2 tsp salt
1/2 c sugar
2 very ripe mashed bananas
1/4 c melted butter
1 egg, beaten
2 Tbsp milk
1/2 c chocolate chips
1/4 c walnuts

Steps:

  • 1. Combine rum and raisins. Let stand 15 minutes; drain and reserve liquid.
  • 2. Cool melted butter to room temperature.
  • 3. Combine dry ingredients; set aside.
  • 4. Combine sugar, bananas, butter, egg and milk; beat well. Gradually beat in flour mixture.
  • 5. Stir in raisins, chocolate chips and nuts.
  • 6. Bake at 350 degrees in a greased and floured loaf pan for 45 to 50 minutes. Poke holes in top of bread with a toothpick. Brush with reserved liquid.

3/4 c sugar
1 egg
1 c mashed banana
2 c flour
2 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 c buttermilk
1/2 c chocolate chips
1 c chopped nuts

Steps:

  • 1. Cream butter and sugar. Mix in egg and banana.
  • 2. Stir together flour, baking powder, baking soda, salt, nuts, and chocolate chips.
  • 3. Add flour mixture to the creamed mixture, alternately with the buttermilk. Stir until just blended.
  • 4. Bake at 350 degrees in a greased and floured loaf pan for 60 minutes. Cool in pan on wire rack for 10 minutes. Remove from pan and continue to cool on wire rack.
