EXTREME BANANA NUT BREAD 'EBNB'

Extreme Banana Nut Bread 'EBNB' image

This is my mom's dense, excellent, and definitely unhealthy banana nut bread recipe. It's always completely gone in minutes. This is great at parties, but hazardous at home. HEALTH WARNINGS: EBNB may be habit forming. A very flexible recipe that will accommodate changes based on what you have on hand. Use any type of fat in place of the butter, such as shortening or oil. It works with either brown or white sugar too.

Time 1h30m

Yield 24

Number Of Ingredients 8

2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
1 cup butter or margarine
2 cups white sugar
2 cups mashed overripe bananas
4 eggs, beaten
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans.
  • Sift the flour, salt and baking soda into a large bowl. In a separate bowl, mix together the butter or margarine and sugar until smooth. Stir in the bananas, eggs, and walnuts until well blended. Pour the wet ingredients into the dry mixture, and stir just until blended. Divide the batter evenly between the two loaf pans.
  • Bake for 60 to 70 minutes in the preheated oven, until a knife inserted into the crown of the loaf comes out clean. Let the loaves cool in the pans for at least 5 minutes, then turn out onto a cooling rack, and cool completely. Wrap in aluminum foil to keep in the moisture. Ideally, refrigerate the loaves for 2 hours or more before serving.

BANANA BREAD IN A CAN

BANANA BREAD IN A CAN image

My mom shared this recipe with me many years ago... and ended my search for the perfect banana bread. This is now the only recipe I use. I've been told by many that it is the best banana bread they've ever tasted! Perfect size for sharing, bake sales and lunch boxes. Very moist! Freezes well.

Categories     Sweet Breads

Number Of Ingredients 11

3/4 c vegetable oil
2 large eggs, beaten
1 tsp vanilla extract
2 c all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 c sugar
1/2 c milk or buttermilk
3 medium/large ripe bananas, mashed
1/2 c walnut pieces

Steps:

  • 1. Preheat oven to 350 degrees. Lightly spray 4 (15 oz.) or 3 (26 oz.) cans with non-stick spray. Mash bananas in separate bowl and set aside.
  • 2. In large bowl, beat eggs. Add oil and vanilla, mix well. In a separate bowl, stir together the flour, baking powder, soda, salt and sugar. Add to wet ingredients alternately with the milk. Add bananas. Beat until smooth - fold in walnuts.
  • 3. Fill cans 1/2 full. Set cans on cookie sheet. Bake at 350 degrees for 40 to 60 minutes OR UNTIL DONE (toothpick inserted in center should come out clean). They will be a nice golden brown. Time depends on the size of the can. Cool in cans on rack until you can touch, at least 5 minutes. Remove from cans and cool completely on rack. Wrap in plastic. Very moist! Freezes well.
  • 4. Note: I've also made this into muffins. (Baking time is less...use toothpick test) As with the cans, spray with non-stick spray (or use cupcake liners) and fill 1/2 full.

Banana Nut Bread baked in a jar image

Got this from allrecipes.com. This bread features an ingenious twist: it is baked in a canning jar! Such a fun and unique presentation makes it a perfect gift!

Provided by Sandi Moorhead

Categories     Sweet Breads

Number Of Ingredients 12

2/3 c shortning
2 - 2/3 c white sugar
4 eggs
2 c bananas, mashed
2/3 c water
3 - 1/3 c cups all purpose flour
2 tsp baking soda
1/2 tsp baking powder
1 - 1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground cloves
2/3 c chopped pecans

Steps:

  • 1. Preheat oven to 325 degrees. Grease insides of 8 (1 pint) straight sided, wide mouth canning jars.
  • 2. In large bowl, cream shortening and sugar until light and fluffy. Beat in eggs, bananas and water. Sift together flour. baking powder, soda, salt, cinnamon, and cloves. Add to banana mixture. Stir in nuts.
  • 3. Pour mixture into greased WIDE MOUTH pint jars, filling 1/2 full of batter. DO NOT put lids on jars for baking. Be careful to keep the rims clean, wiping off any batter that gets on the rims.
  • 4. Bake at 325 degrees for 45 minutes. Meanwhile, sterilize the lids and rings in boiling water.
  • 5. As soon as cake is done, remove from oven one at a time; wipe rims of jars and put on lid and ring. Jars will seal as cakes cool. Place the jars on the counter and listen for them to "ping" as they seal. If you miss the "ping", wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed.
  • 6. Cakes should be eaten immediately or kept sealed in refrigerator for up to a week.
  • 7. NOTE: Place the jars directly in the center of the middle rack in the oven, to bake .....not on a cookie sheet.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana nut bread will be. Make sure there are no green streaks on the bananas.
  • Mash the bananas well: This will ensure that your banana nut bread is smooth and moist. You can use a fork, potato masher, or blender to mash the bananas.
  • Don't overmix the batter: Overmixing the batter will make your banana nut bread tough. Mix the ingredients just until they are combined.
  • Use a variety of nuts: You can use any type of nuts you like in your banana nut bread, such as walnuts, pecans, almonds, or hazelnuts. Just be sure to chop the nuts finely so that they don't overpower the other ingredients.
  • Bake the banana nut bread until a toothpick inserted into the center comes out clean: This will ensure that your banana nut bread is cooked through.

Conclusion:

Banana nut bread is a delicious and easy-to-make treat that is perfect for any occasion. Whether you're looking for a quick breakfast, a sweet snack, or a dessert to impress your guests, banana nut bread is sure to please. So next time you have some ripe bananas on hand, give this recipe a try. You won't be disappointed!
