CHUNKY MONKEY BEST VEGAN CHOCOLATE CHIP BANANA BREAD RECIPE - (4.3/5)

Chunky Monkey Best Vegan Chocolate Chip Banana Bread Recipe - (4.3/5) image

Provided by á-49368

Number Of Ingredients 9

2 cups all-purpose unbleached white flour
1/3 cup sugar
1/2 tsp baking powder
1/2 tsp baking soda
dash salt (optional)
3 medium very ripe bananas
juice of 1/2 lemon
1/2 cup coconut oil
1 cup vegan chocolate chips/chunks

Steps:

  • 1. Preheat oven to 375 degrees F. 2. In a big bowl, combine all dry ingredients and sift well with a fork or a whisk. In a medium bowl, mash the bananas, leaving some small chunky bits. Add the oil and lemon juice to the bananas, and combine well. 3. Add the wet ingredients and the chocolate chips to the big bowl with the dry ingredients, and combine well until just mixed. (Don't overmix-when in doubt, just stop, since it's better that two chocolate chips are touching than that your loaf is tough). 4. Pour the batter into a loaf pan or 2 mini loaf pans. Bake for 45-50 minutes (big loaf) or 25 minutes (small loaf). Since heat varies by the oven, you should check the loaves using the toothpick method. When it's golden on top and toothpick comes out clean, it's done. Enjoy!

CHUNKY MONKEY ICE CREAM BANANA BREAD

CHUNKY MONKEY ICE CREAM BANANA BREAD image

Yield 1 big loaf

Number Of Ingredients 6

• 2 pints Ben & Jerry's Chunky Monkey ice cream, softened or melted
• 3 cups (375g) self-rising flour (or 360g AP flour + 1 tablespoon baking powder + 1 1/2 teaspoons salt)
Optional mix-ins:
• 1 very ripe banana, chopped
• 1 very delicious chocolate bar (I chose bittersweet), chopped
• Handful of walnuts, chopped

Steps:

  • Preheat oven to 350F (180C) Grease and flour bread pan, or line with parchment paper. Mix melted ice cream and flour until well combined. Add optional mix-ins. Pour into prepared bread pan. Bake for 1-1.5 hrs. This seems like a lot, but we've essentially made a double loaf in a single pan. If the top starts to brown too much, cover it with aluminum foil and continue to bake. Bread is done when a skewer inserted into the middle comes out clean.

Tips:

  • For a sweeter bread, use overripe bananas. They will add a more intense banana flavor and natural sweetness.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk. Let it sit for 5 minutes before using.
  • To make sure the bread is cooked through, insert a toothpick into the center. If it comes out clean, the bread is done.
  • Let the bread cool for at least 10 minutes before serving. This will help it to set and make it easier to slice.
  • Serve the bread warm or at room temperature. It can be eaten plain, with butter, or with a glaze.

Conclusion:

Banana monkey bread is a delicious and easy-to-make treat that is perfect for breakfast, brunch, or dessert. It is a great way to use up overripe bananas, and it is sure to be a hit with family and friends. With its moist texture, sweet banana flavor, and crunchy pecan topping, this bread is a true crowd-pleaser. So next time you have a craving for something sweet and satisfying, give this recipe a try. You won't be disappointed!
