Tips:
- To achieve a light and fluffy meringue, ensure your egg whites are at room temperature before whipping.
- Use a clean, grease-free bowl and whisk when whipping the egg whites, as any traces of grease can prevent them from reaching their full volume.
- Gradually add the sugar to the egg whites while continuing to whisk, allowing it to dissolve completely before adding more.
- Do not over-whip the meringue, as it can become grainy and lose its glossy appearance.
- To test if the meringue is ready, lift the whisk out of the bowl – stiff peaks should form that hold their shape.
- When folding the meringue into the banana mixture, do so gently to prevent deflating it.
- Bake the meringue until it is golden brown and has a slightly crispy exterior, while the center remains soft and fluffy.
- Allow the meringue to cool completely before serving, as this will help it to set and prevent it from collapsing.
