Time 1h25m

Number Of Ingredients 14

1 mango - peeled, seeded, and chopped
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
½ teaspoon salt
½ teaspoon pumpkin pie spice
¾ cup unsalted butter, softened
½ cup white sugar
½ cup brown sugar
3 large eggs
1 ¼ teaspoons vanilla extract
½ cup mashed banana

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.

  • Combine butter, white sugar, and brown sugar in a small bowl until blended; mix in eggs and vanilla extract. Fold into the dry ingredients until just combined. Fold in chopped mango, pureed mango, banana, coconut, and walnuts. Let sit for 10 to 15 minutes. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 55 to 65 minutes.

Categories     Dessert

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 10

1/3 cup raisins
2 apples
1 large egg
1 pinch salt
1/2 cup granulated sugar
1 cup cooked short-grain white rice
6 tablespoons butter, room temperature
1 tablespoon apricot jam
2 tablespoons ground almonds
1 tablespoon granulated sugar

Steps:

  • Preheat oven to 350ºF. Butter a deep baking dish; set aside.
  • Peel and shred apples. In a medium bowl, beat together egg, salt and 1/2 cup sugar. Stir in raisins, shredded apple, rice, 4 Tablespoons of the butter, jam and almonds.
  • Pour into buttered dish; dot with remaining 2 Tablespoons butter. Sprinkle with 1 Tablespoon sugar. Bake 40 minutes; serve hot.

Tips:

  • Choose the ripest fruits. This will ensure that your kugel is naturally sweet and flavorful. Overripe bananas or mangoes are acceptable, but avoid fruits that have darkened or have mold.
  • Grate your fruits. Grating your fruits will help them cook evenly and quickly. If you don't have a grater, you can also mash the fruits with a fork.
  • Use a good quality rice. Long-grain white rice, basmati rice, or brown rice are all good choices for this recipe. Avoid using instant rice, as it will not cook properly in the oven.
  • Don't overcook the rice. The rice should be cooked until it is tender but still has a slight bite to it. If you overcook the rice, it will become mushy.
  • Add the eggs and milk mixture gradually. This will help prevent the eggs from curdling.
  • Bake the kugel until it is golden brown. This will take about 45-50 minutes.

Conclusion:

Banana-Mango-Apple Rice Kugel is a delicious and easy-to-make dish that is perfect for breakfast, lunch, or dinner. It is filled with the natural sweetness of fruits, and the rice gives it a satisfying texture. This kugel is also a great way to use overripe fruits that you might otherwise have to throw away. You can also use frozen fruits to make banana-mango-apple rice kugel. Just thaw the fruit completely before using it in the recipe.
