This recipe is a family favorite. It is great for using overripe bananas. I usually double the recipe and make two loaves. You can also add walnuts if you wish. Note: When your bananas are overripe, you can put them in the freezer until you are ready to use them.

1 ½ cups all-purpose flour
1 cup white sugar
¼ cup butter, softened
1 teaspoon vanilla extract
1 teaspoon baking soda
½ teaspoon baking powder
1 egg
3 very ripe bananas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 5x9-inch loaf pan.
  • Mash bananas and add flour, sugar, butter, vanilla, baking powder, baking soda and egg. Mix well. Pour into loaf pan.
  • Bake in preheated oven until toothpick inserted into center of cake comes out clean, 50 to 60 minutes.

1 (18.25 ounce) package yellow cake mix
1 (3.5 ounce) package instant banana pudding mix
½ cup mashed banana
4 eggs
1 cup water
¼ cup vegetable oil
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x4 inch loaf pans.

2 tablespoons butter
3 bananas (mashed)
1 teaspoon bicarbonate of soda
1 teaspoon baking powder
1 cup sugar
1 1/2 cups plain flour (all purpose)
1 egg
2 tablespoons milk

Steps:

  • Preheat oven to 175C fan forced (for conventional I would recommend about 185C).
  • Grease and line (with baking paper) a standard loaf tin.
  • Sift flour, bi-carbonate and baking powder together.
  • Cream butter and sugar with a stand mixer or hand held mixer until well mixed.
  • Add the egg and mashed banana and mix well together.
  • Add the sifted flour and baking powder till incorporated and mix well and then add the 2 tablespoons milk and mix through.
