This is one of my adopted recipes. I love plaintains! It looks like a dish my family and I would enjoy, so I hope to make it and edit it in the future.

3 lbs green plantains, or other green bananas, peeled
salt
2 cups chicken stock
ground nutmeg
2 tablespoons butter
1 pinch cinnamon
1 small onion, chopped
1 cup grated cheddar cheese
1 cup light cream or 1 cup milk
1/2 cup fresh breadcrumb
2 eggs, beaten

Steps:

  • (Grated Gruyere cheese can be used instead of cheddar cheese.)
  • Place bananas in saucepan and add just enough chicken stock to cover.
  • Bring to a boil, reduce heat and simmer until bananas are tender, about 20 to 25 minutes.
  • Using a potato masher, mash until smooth (chicken stock will be absorbed).
  • Let cool slightly.
  • Meanwhile, heat butter in a small frypan and saute onions until tender.
  • Add the onions, cream, beaten eggs to cooked bananas until combined; season with salt, nutmeg and cinnamon to taste.
  • Mixture will be quite moist.
  • Place banana mixture in a buttered shallow baking dish.
  • Combine cheese with bread crumbs; sprinkle over top.
  • Bake at 350 for 35 - 40 minutes or until top is golden.

2 (1 pint) cups low fat cottage cheese
2 tablespoons sugar
1 teaspoon vanilla extract
1 teaspoon freshly grated fresh lemon rind
1 teaspoon freshly squeezed lemon juice
4 bananas
4 graham cracker squares, crumbled
ground cinnamon, for garnish

Steps:

  • Combine the cottage cheese, sugar, vanilla, lemon rind and lemon juice in a food processor and blend until smooth.
  • Spread the blended cheese mixture in a shallow 7-by-12-inch glass baking dish or put 1/4 cup of the mixture into each of 8 individual au gratin dishes.
  • Thinly slice the bananas, and spread the slices evenly on top of the cheese mixture.
  • If using individual dishes, put half a sliced banana on top of each serving.
  • Sprinkle the top evenly with the graham-cracker crumbs and then sprinkle lightly with cinnamon.
  • Place under the broiler until hot and lightly browned.

100g golden caster sugar
75g butter , cut into cubes
4-5 firm bananas
pinch of sea salt
1 orange , zested
500g pack ready-rolled all-butter puff pastry
200ml double cream
1 tbsp icing sugar
1 tbsp dark rum
1 tsp cinnamon

Steps:

  • Heat oven to 200C/180C fan/gas 6. Melt the sugar and butter together on a low heat without stirring the mixture. Once the sugar has melted, turn up the heat and bubble until it turns a deep caramel colour. If the butter separates from the caramel, take the pan off the heat and add 1 tbsp of warm water, stirring until the butter emulsifies again.
  • Pour the caramel into a 23cm cake tin with a solid base and spread the caramel out quickly with the back of a warm spoon. Slice the bananas into 2cm-thick pieces and arrange them, cut-side down, in concentric circles in the tin, then sprinkle over a pinch of sea salt and half the orange zest.
  • Cut the pastry into a circle 3cm larger than the tin. Lay the pastry on top of the bananas and tuck the edges down inside the tin. Bake in the oven for 25-30 mins until the pastry is risen and cooked through. Whisk the double cream with the icing sugar until soft peaks form. Add the rum, cinnamon and remaining orange zest, and whisk until just combined.
  • Leave the tart to cool in the tin for 5 mins, then carefully turn the tart out onto a large plate, wearing oven gloves in case the hot caramel splashes. Serve with the cream.
