I found this gorgeous recipe in Ruth Isabel Ross' "Irish Baking Book", which I had originally given to my mum as a birthday present when spending a year abroad in Ireland. It is easy to make and just tastes so fruity. =)

- Pre heat the oven to 180°C and line a small baking tin with baking paper.
- Mix the flour, the baking powder, the sugar and the raisins/sultanas in a bowl.
- Add the egg and the well mashed bananas. Blend toghether (The dough should be soft and creamy.).
- Fill the dough into your baking tin and bake for approximately 45 minutes (or until inserted toothpick comes out clean).

- Choose the right bananas: Overripe bananas with brown spots are ideal for banana bread as they are sweeter and have a richer flavor.
- Mash the bananas thoroughly: Make sure the bananas are mashed until smooth, without any lumps, to ensure an even texture in the bread.
