5 cups ripe bananas (sliced)
2 cups sugar (granulated sugar)
1/2 cup orange juice
3 tablespoons lime juice (, or lemon juice)
generous pinch of salt

Steps:

  • Preheat oven to 250 degrees.
  • Put all ingredients in large pot over med heat.
  • Once the jam starts to bubble, reduce heat and simmer for 15 minutes, stirring occasionally.
  • While the jam is cooking place jars, lids and any equipment that will come in direct contact with the jam into the oven. Bake for 10 minutes, then shut off oven, but leave items in there until you are ready to use them.
  • Once jam is cooked, ladle it into the jars and place lids and screw tips on. As jam cools vacuum will be created and lids will seal (you will generally hear a pinging sound when the seal happens).

  • In 4-quart saucepan, mix bananas, lemon juice and pectin until pectin is dissolved. Heat to boiling over medium heat, stirring constantly. Stir in sugar. Heat to full rolling boil, stirring constantly; remove from heat. Stir in vanilla and cinnamon.

4 cups bananas, peeled and ripe
6 1/2 tablespoons lemon juice
3 ounces pectin
6 cups sugar
3/4 cup unsalted butter

Steps:

  • Combine bananas, lemon juice and 3 cups sugar in a pan and let stand 1 hour.
  • After 1 hr, add remaining sugar and place pan over medium-high heat; stirring constantly until sugar is dissolved.
  • Bring mix to a boil for two minutes.
  • Remove pan from flame and skim off any foam.
  • Place pan over heat again for 1 minute.

  • Add butter and bring mix to a boil again.
  • Add pectin and stir constantly.
  • Boil 1 minute.

2 lbs ripe bananas
1 3/4 cups dark brown sugar
2 cups light brown sugar
1 1/3 cups water
3 limes, juice of
1 teaspoon cinnamon
3 tablespoons pure vanilla extract
1 dash ginger powder
6 tablespoons dark rum
