1 large egg, beaten
½ cup light brown sugar
¼ cup granulated sugar
½ cup butter, softened
¼ cup sour cream, greek yogurt may be substituted
1 teaspoon vanilla extract
2 ripe bananas
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
1 large egg
4 oz cream cheese, softened
¼ cup granulated sugar
3 tablespoons all-purpose flour

Steps:

  • Preheat oven to 350F (180C).
  • To prepare the bread, combine egg, sugars, butter, sour cream and vanilla in a large mixing bowl. Whisk together. Add the bananas and mash together.
  • Add flour, baking powder, baking soda and mix lightly to combine. Set aside.
  • To prepare the cream cheese filling, mix egg, cream cheese, sugar, and flour in a small bowl.

1 c granulated sugar
1 c brown sugar
1 c vegetable oil
3 eggs
2 tsp pure vanilla extract (for the muffin batter)
2 c mashed, ripe bananas
3 c natural bran, or bran buds
1 1/2 c buttermilk (if you do not have buttermilk, simply mix 1 tbsp lemon juice to the milk, and set aside)
3 c all purpose flour
3 tsp baking powder
3 tsp baking soda
1 tsp salt
1 c dry cranberries, or raisins, or combination of both
FOR the cream cheese filling
1 pkg cream cheese spread, (400 gms) softened to room temperature
1/4 c icing sugar
1 tsp pure vanilla extract

Steps:

  • 1. Muffin Tins - Greased or Paper Lined. Preheat oven to 375 C (190C). Hint: Set oven preheat to 385F. Pop the filled tins into the oven; close the door and immediately drop the temperature setting to 375C. In this way, you will not lose any precious baking temperature when you open the oven door,initially.
  • 2. CREAM CHEESE FILLING: Mix together, Cream Cheese, Icing Sugar and 1 tsp vanilla, and set aside for later use.
  • 3. In a bowl, combine the sugars and oil. Beat in eggs, one at a time, the 2 tsp vanilla measure, and mashed bananas; mix well. Add Bran and Milk.
  • 4. In another bowl combine flour, baking powder, baking soda and salt. Add to Banana/Bran mixture.
  • 5. Stir until ingredients are just mixed - do not overmix. Fold in cranberries and/or raisin combination.
  • 6. Spoon batter into prepared muffin tins - 1/3 full
  • 7. Spoon cream cheese mixture, evenly divided, onto batter in muffin tins.
  • 8. Spoon balance of muffin batter onto cream cheese, filling to the top.
  • 9. Bake in preheated oven for 20 minutes or until tester comes out clean. You might need an extra 5 minutes, depending on your oven.
  • 10. Allow to cool on racks, in tins for a few minutes. Turn out, and allow muffins to cool completely on racks, before freezing (if you choose). Serve warm, or cool, or however you wish. After your initial taste you will wish to hide the batch for yourself, but by all means, do serve them. 1 c flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cardamom
1/2 c light brown sugar
1/4 tsp salt
1/2 stick butter, softened
3 ripe bananas mushed,
1/2 c applesauce, not sweetened
1/2 tsp vanilla
1/8 tsp banana extract
1 egg
1/4 - 1/2 c chopped walnuts or pecans
butter cream frosting or banana glaze
butterscotch chips

Steps:

  • 1. Spray muffin tin with non stick cooking spray. Set oven top 350 degrees
  • 2. Mix flour, baking soda, cardamom, cinnamon, nutmeg, and salt in a bowl
  • 3. In a seperate bowl beat sugar and butter until mixed well. Add applesauce, bananas, extracts and egg and beat again until mixed well.
  • 4. Now add flour mixture to sugar and banana mixture about a third at a time, beating after each third until all flour mixture is added.
  • 5. Into this fold the walnuts or pecans.
  • 6. Using a small ladle, put muffin mix into tins filling about 2/3 of the way.
  • 7. Bake for about 25 to 30 minutes or until toothpick inserted in muffin comes out clean. Remove from oven and let cool completely if adding frosting or glaze. Otherwise serve warm from the oven.
  • 8. For Buttercream Frosting: Put frosting in a pastry bag, add the tip of choice and squeeze onto muffins in desired thickness. Top off with a butterscotch morsel
  • 9. For banana glaze: add powdered sugar, banana extract, and milk together to desired consistancy (add extract to your taste) Dip cooled muffin tops into glaze and let excess drain off while upside down.
