BANANA BREAD PUDDING

Banana Bread Pudding image

When I visited my grandmother in summer, I always looked forward to the comforting banana bread pudding she'd make. With its crusty golden top, custard-like inside and smooth vanilla sauce, this pudding is a real homespun dessert. Now I make it for my grandchildren. -Mary Detweiler, Middlefield, Ohio

BANANA CREAM CHEESE BREAD PUDDING

Banana Cream Cheese Bread Pudding image

I love bread pudding. I made this recipe when I had some almost too ripe bananas. It is really good hot out of the oven with a scoop of butter pecan ice cream. It reminds me of the Mexican Capirutada my mom used to make.

Time 20m

Yield 12 serving(s)

Number Of Ingredients 7

4 cups cold milk
2 (3 1/2 ounce) packages instant banana pudding mix (you can use vanilla, too)
1 (8 ounce) package cream cheese, softened
1/3 cup sugar
1 1/2 cups thawed Cool Whip (4 oz)
1 (12 ounce) box vanilla wafers
4 bananas, sliced

Steps:

  • In a large bowl combine milk and pudding mix according to package directions.
  • In a small bowl stir together cream cheese and sugar until smooth.
  • Stir into pudding mixture (I use the mixer).
  • Fold in cool whip (I just stir it good).
  • In a 13x9x2 inch baking dish layer half the cookies, half the bananas and half the pudding mixture.
  • Repeat layers.
  • Cover and refrigerate 2 hours.

Tips:

  • Use fresh, ripe bananas for the best flavor. Overripe bananas can make the bread pudding too mushy.
  • Be sure to drain the cottage cheese well before using it. This will help prevent the bread pudding from being too wet.
  • If you don't have a bread pudding dish, you can use a 9x13 inch baking dish instead. Just be sure to adjust the baking time accordingly.
  • Serve the bread pudding warm or at room temperature. It's also delicious served cold.
  • Top the bread pudding with your favorite toppings, such as whipped cream, ice cream, or fresh fruit.

Conclusion:

This banana cream cheese bread pudding is a delicious and easy-to-make dessert that is perfect for any occasion. It's a great way to use up leftover bread and bananas, and it's always a hit with family and friends. So next time you're looking for a sweet treat, give this bread pudding a try. You won't be disappointed!
