3 large, ripe bananas
2 1/2 cups rolled oats
1 cup peanut butter (my family prefers chunky)
1/3 cup semisweet chocolate chips
1/4 cup honey
2 teaspoons cinnamon
Pinch of salt

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
  • Mash the bananas with a fork in a large bowl. Add the oats, peanut butter, chocolate chips, honey, cinnamon and salt, and stir until just combined. (The mixture may be thick and hard to stir.)
  • Scoop out the dough with a cookie scoop, and form balls with your hands, pressing the dough together very tightly. Place the balls on the prepared baking sheet. Bake until the edges start to brown, 12 to 15 minutes.

They are pretty yummy, but there are probably plenty of nicer recipes (ie. with butter and sugar) if you're not weight watching. I find these to be a really nice, healthy, filling treat though, and I hope you enjoy them too!

2 cups oats (not instant, the proper scotts type)
1/2 cup skim milk
1 egg
2 tablespoons Splenda sugar substitute
1/2 teaspoon vanilla extract

  • Preheat the oven to 180c.
  • Mash the bananas and mix with the oats, milk and egg before adding the remaining ingredients (it just mixes a bit easier and more evenly this way). 2 ripe bananas, mashed
½ cup whole wheat flour
¼ cup wheat bran
¼ cup rolled oats
½ cup packed brown sugar
½ cup low-fat plain yogurt
⅛ cup real maple syrup
2 egg whites

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat mashed bananas, egg whites, brown sugar, maple syrup, yogurt, and cinnamon.
  • Combine the remaining dry ingredients: flour, oats, wheat bran, salt and baking powder in a separate bowl. Use an electric mixer to combine dry ingredients with wet mixture.
  • Add in raisins, chopped prunes, and/ or nuts.
  • Roll cookies into balls, place on a cookie sheet coated with cooking spray. Bake for 8-12 minutes until cookies are firm and dry.

This is an original recipe from Debbie Fields, which I found and posted in a Recipezaar forum in response to a request. It prompted such positive replies that I thought I should post the recipe for others who might be searching for it, too. (Servings are calculated at 3 cookies each.)

2 2/3 cups flour, all-purpose
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup brown sugar, light packed
1/2 cup sugar
1 cup butter, softened
1 large egg
1 teaspoon liqueur or 1 teaspoon extract, banana flavor
3/4 cup ripe banana, mashed
2 cups semi-sweet chocolate chips
1 cup walnuts, chopped

Steps:

  • Preheat oven to 300°F
  • In a medium bowl, combine four, soda and salt. Mix well and set aside.
  • In a large bowl with an electric mixer, blend sugars at medium speed. Add butter and mix to form a grainy paste, scraping down the sides of the bowl. Add egg, liqueur and banana, and beat at medium speed until smooth. Add flour mixture, 1 cup of the chocolate chips and walnuts, and blend at low speed until just combined.
  • Drop by rounded tablespoons onto ungreased cookie sheets, 2 inches apart.
  • Sprinkle cookies with chocolate chips, 6 to 8 per cookie.
  • Bake 25-27 minutes until cookie edges begin to brown.
  • Transfer immediately to a cool surface.

I was searching for something sugar-free to take to a bake sale, and came across a recipe similar to this online. This is my modified version of that recipe. These sold quickly at the bake sale! They have a granola-like appearance and are soft and chewy. A little cinnamon added in might be good, too.

3 ripe bananas
2 cups rolled oats
1/3 cup vegetable oil (I used olive oil)
1 tablespoon vanilla extract
1 cup raisins
nonstick cooking spray

Steps:

  • Preheat oven to 350°.
  • Mash bananas in a large bowl. Stir in the rest of the ingredients and combine well.
  • Drop by teaspoonfuls onto a cooking sheet sprayed with baking spray.
  • Bake for 15 minutes or until lightly browned.
