2/3 c brown sugar, firmly packed
1/2 c chopped walnuts or pecans
1 Tbsp cinnamon, ground
1 1/2 c all-purpose flour
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
3/4 c sugar
1/2 c unsalted butter, room temperature
1 egg
1 1/3 c bananas, mashed very ripe, 3 large
3 Tbsp buttermilk

Steps:

  • 1. PREHEAT OVEN TO 350F. GREASE 8X8X2 INCH BAKING PAN.
  • 2. STIR IN CHOCOLATE CHIPS, BROWN SUGAR, WALNUTS OR PECANS AND CINNAMON IN A SMALL BOWL UNTIL WELL BLENDED; SET ASIDE.
  • 3. SIFT ALL FLOUR, BAKING SODA, SALT & BAKING POWDER AND SET ASIDE.
  • 4. USING AN ELECTRIC MIXER, BEAT SUGAR, BUTTER AND EGG IN MIXING BOWL UNTIL FLUFFY. BEAT IN MASHED BANANAS AND BUTTERMILK. ADD DRY INGREDIENTS AND BLEND WELL.
  • 5. SPREAD HALF THE BATTER IN PREPARED BAKING PAN. SPRINKLE WITH HALF OF STREUSEL MIX. REPEAT WITH REMAINING BATTER.

1/2 teaspoon salt
1 cup sour cream
3/4 cup chopped walnuts

Steps:

  • In a large bowl, cream the shortening and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Add bananas and mix well.
