- Cooking on stovetop.
- Bake pie shell. Stir together sugar, cornstarch (Cornstarch is 1/4 C PLUS 2 T - I was unable to enter that amount as one ingredient)and salt in saucepan. Blend milk and egg yolks; gradually stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Remove from heat; blend in butter and vanilla. Immediately pour into baked pie shell; press plastic wrap onto filling. Chill pie thoroughly, at least 2 hours. If desired, serve pie with sweetened whipped cream.
- Microwave.
- Bake pie shell. Stir together sugar, cornstarch and salt in microwave glass mixing bowl. Blend milk and egg yolks; Whip with whisk well. Cook on high for 2 minutes at a time, take out and use wire whip to blend well and return to microwave for 2 more minutes. Continue this until mixture is of pudding consistency. - In a microwavable bowl, mix sugar, flour, and salt.
- In a separate bowl, whisk milk and eggs or egg whites. Add to dry ingredients.

BANANA AND COCONUT CREAM PIE WITH GRAHAM CRACKER CRUST

- For the crust: Preheat the oven to 350 degrees F. Brush a 9-inch pie plate with butter to grease.
- In a medium bowl, stir to combine the melted butter, graham cracker crumbs, sugar and salt, then press into the bottom and up the sides of the prepared pie dish. Bake until lightly golden and crisp, 12 minutes. Set aside on a wire rack to cool completely.
- For the pie: Whisk the granulated sugar and flour together in a medium saucepan set over medium heat. Whisk in the milk, coconut milk, condensed milk, coconut extract and vanilla extract. Whisking occasionally, bring the mixture to a boil. Boil for 2 minutes, then temper the egg yolks: carefully remove a cup of the hot milk mixture and whisk in the beaten eggs yolks. Add the yolk mixture to the milk and then add the butter. Remove from the heat and fold in the bananas, then transfer the pie filling to the cooled graham cracker crust.
- Cover the pie with plastic wrap, placing the wrap directly onto the surface of the filling. Chill until completely set, at least 4 hours or up to overnight.
- Whip the heavy cream and confectioners' sugar until stiff peaks form, then spoon the whipped cream over the chilled pie. Garnish with toasted coconut chips and slice to serve.

- Make the shell:
- In a food processor or bowl combine well the flour, the sugar, the baking powder, and the salt, add the butter, and blend the mixture until it resembles fine meal. Stir in all but 1 tablespoon of the coconut, reserving the remaining 1 tablespoon for garnish, and the egg, stirring until the mixture forms a dough. Knead the dough lightly on a floured surface several times to blend it well and press it onto the bottom and up the side of an 11-inch fluted tart pan with a removable bottom. Chill the shell for 30 minutes, line it with foil, and fill the foil with the rice. Bake the shell in the lower third of a preheated 375°F. oven for 10 minutes, remove the rice and foil carefully, and bake the shell for 5 to 10 minutes more, or until it is golden. Let the shell cool completely in the pan or a rack.
- Make the filling:
- In a heavy saucepan whisk together the sugar, the cornstarch, and the eggs, add the milk in a slow stream, whisking, and bring the mixture to a boil over moderate heat, whisking constantly. Simmer the pastry cream, whisking, for 2 minutes, transfer it to a bowl, and stir in the coconut extract, the vanilla, and the Malibu rum. Chill the pastry cream, its surface covered with plastic wrap, for 4 hours, or until it is cold. The pastry cream may be made 1 day in advance and kept covered and chilled.
- Slice thin on the diagonal enough of the bananas (about 2 1/2) to cover the bottom of the shell in one layer, arrange the slices in the shell, and cover them with the pastry cream, spreading it evenly. Slice thin on the diagonal the remaining bananas and arrange the slices decoratively over the pastry cream in solid layers, making each layer gradually smaller. In a small saucepan melt the apple jelly over moderate heat, while it is still warm brush it over the banana slices, coating them completely, and chill the tart for 1 hour. The tart may be prepared up to this point 1 day in advance and kept covered loosely and chilled.
- Just before serving, in a chilled bowl beat the cream until it holds stiff peaks, transfer it to a pastry bag fitted with a medium star tip, and pipe it decoratively around the edge of the tart. Sprinkle the cream with the reserved 1 tablespoon coconut and remove the side of the pan.

- Preheat oven to 350'F.
- Toast the coconut in an oven proof dish for about 5-7 minutes. Keep an eye on it, it browns fast. Set aside to cool.
- Set aside 1/2 cup of whipped topping for the top of the pie.
- Prepare your coconut pudding according to package directions but cut back on the liquid by about 1/4 cup as you want the pudding to be a bit thicker.
- Make sure the pudding is completely cool then add 1/2 of the remaining whipped topping. You will use the other half later.
- In the bowl of a food processor add the graham crackers and sugar. Process until you are left with a fine crumb. Add the butter and process until it comes together.
- Press into the bottom of a greased 9" spring form pan. Bake for 5-7 minutes. When done cool on a wire rack.
- In the bowl of a stand mixer beat the cream cheese and sugar together until smooth. Using a spatula, gently fold in last portion of the remaining vegan whipped cream.
- Arrange one and a half sliced bananas on the cooled graham crust. Top with half the cream cheese mixture. Then arrange the other one and a half bananas slices on the top of that.
- Add the whipped topping/pudding mixture on top of the cream cheese layer.
- Top the pie with the remaining 1/2 cup whipped topping you reserved and toasted coconut.
- Chill in the fridge overnight and enjoy.

- 1. If using homemade pie dough crust pre-bake the crust. If using Cool Whip topping you are then done with crust. If using Meringue topping crust will be filled and go back to oven for short time.
- 2. Prepare the instant pudding per package directions but use 1/3 less milk than called for. (Insures a thicker filling.)
- 3. Peal and slice the two ripe Bananas and line bottom of crust. Pre-packaged Graham Cracker or your own.
- 4. Mix Coconut into pudding and spoon pudding into crust atop Bananas. I at times provide another layer of sliced Bananas on top.
- 5. If using Cool Whip topping place pie back into fridge to chill until ready to serve, Spoon on or spray on the Whipped Topping when ready to serve.
- 6. For mirengue do it thusly -- In bowl beat egg whites and salt with hand mixer until soft peaks form. Be sure bowl is completely free of oil or fat, or peaks wont be formed. At high speed sprinkle in Sugar 2 tablespoons at a time. Beat until white glossy peaks stand. Take a bit between thumb and finger and insure all sugar is dissolved.
- 7. With back of spoon spread meringue over pie filling. Try to mound the center somewhat, and pull spoon up to form slight peaks. Sprinkle on a few Coconut shreds, they will brown. Bake about 10 minutes at 375 to 400 degrees, until golden. Remove from oven allow to cool away from drafts. Serve. Enjoy.
- 8. Note: I became the "Kitchen Help" for this one. Isabel, my 8 year old friend, made this from the bottom up. Pie Crust, the filling, the slicing to the meringue topping. I gave a little instruction along the way and backed off. Way Off. She Rocks.
